Possibly the best and as they said the most refined Sri Lankan food I have tasted in Auckland yet was tasted at Lamissi Restaurant Panmure.
Well presented tasty and authentic Lankan food ( without an overdose of fiery chillies nor oozing with too much oil); excellent and friendly service, great choice of irms including a good choice of desserts, catering to a varying taste was offered, hence this post.
I've been frustrated with several of the Sri Lankan places here. Most offer food with a Sri Lankan clientele in mind. There is much opportunity to promote our unique Sri Lankan food to people of other cultures but many Lankan places do not take that opportunity. So I was very happy to find this gem.
I've feared to take non Sri Lankan friends to most places but Lamissi eas one place where our group that consist5ing of one Kiwi, one Aussie and two children who are not used to ultra spicy aka chilli and oil rich food plus 3 Lankans all enjoyed great food.
We went to the 6.30 slot of their Saturday dinner buffet and I would give them 9.5 out of10. I will definitely go there again.

Low carb veg and egg breakfast bake

I craved a warm savoury scorn or a muffin the other day but since I'm eating low carb these days I couldn't indulge in one.

So I created this low-carb version which surprisingly tasted way better than a muffin or scone.

4 eggs
2 tbsps oat flour
2 tbsps almond flour
Half teaspoon baking powder
Half cup milk I used almond milk
About 10 mushrooms sliced
One small onion chopped
Two handfuls of spinach washed and shredded

Oil a loaf pan. Preheat oven to 190°c
Place the oat flower, almond flour and the BP in a large mixing bowl.
Add a pinch of salt.
Heat abiut 2 tsp Olive oil in a pan and sauteed onions then add the mushrooms and cook until semi cooked then add the spinach. You can eat other vegetables too I added a few pieces of red capsicum for colour

Make a hole in the centre and
break the eggs into it. Add the milk and mix to a smooth batter. Then still in the sauteed vegetables. Stir in the cheese leaving a little bit to sprinkle on top.

Pour into the greased loaf pan. Sprinkle the rest of the cheese on top. I also sprinkled a few pumpkin seeds this is not essential

Baking the preheated oven for about 30 -35 mts. Cooling pan for 10 minutes and turn out. You can also have this as a meal with a salad

Healthy seed crackers

I haven't uploaded any food posts lately as I'm consciously reducing social media time. But I have not stopped cooking. So will upload quietly.

These seed crackers are a great weight control snack. I eat it with a dip even for a light meal.
They are hellishly expensive to buy but pretty affordable to make.

I used a YouTube recipe to make them but it failed, not once but several times.

So i changed it around and have perfected it to be a real no fail recipe so this is my own.

The issue was because of adding chia deeds before soaking. Chia seeds absorb too much moisture so the biscuits became rubbery. I did slow bake them and save them but found a way of adding chia seeds and getting perfectly crisp crackers.
I add my own flavourings too. This time, i added fine oowder if curry leaves, garlic and onion powders. Another good combination is garlic powder onion powder and mixed herbs..
To half the biscuit dough I added finely chopped dried cranberries. The choices are endless
I started making these after finding them at a fancy supermarket. They are quite expensive but pretty cheap if you make them at home

Recipe
1.5 cups sunflower seeds
1 cup sesame seeds. I used toasted
0.5 cup pumpkin seeds
1/3 c flax seeds (lin seeds)
2 tbsp Psyllium husk powder
1/2 tsp salt
1 tsp each garlic and onion powder. Add herbs too
You can use about 2.5 c seeds in any combination. i replaced some sesame seeds eith Chia but added them. Just before baking.
2 1/4 c water

Please all the seeds in a large bowl
Add water
Leave to soak up for about 20-30 minutes
Preheat the oven to fanbake 150 °c.
Line two large baking sheets with baking paper.
Mix the seed mix well with a spoon. Add chia seeds if you're using it.
Using a tablespoon spread half the mixture in one lined baking sheet spreading as thin as you can. Flatten out to the same thickness carefully.
Repeat with the other half.
At this stage I added some finely chopped dried cranberries to 1/2 and flattened them.
Bake at 150.for 30 minutes.
Then take out and mark into squares rectangles with a sharp knife.
Pop back into oven and bake for another 30 to 45 minutes.
When ages are slightly browning remove from my oven and cool on a wire rack carefully breaking them into squares.
Store in an airtight container.
Greet with dips cheeses or as part of a cheese board
Please note that depending on your oven it may take a bit longer to bake. They should be quite dry. I bake my second batch for 1 hour after the first half hour

Malaysian Nasi Lemak

I made this favourite meal of mine for Sunday lunch yesterday.

I used the recipe from Rasa Malaysia, a favourite website. Recipe link in comment.

Cooked coconut rice with the addition of a pandan leaf
Components:
Coconut rice
Fried sprats/ ikan bilis with Sambal sauce
Roasted peanuts
Sliced cucumber
Boiled egg. Usually a half egg
Served with chicken rendang ( i used a spice mix )
Traditionally a piece of dee fried small fish like sardines is added but as my son doesn't like ask my son hates it, i added chicken rendang

This is an easy to make meal which can be made with available ingredients, the only special ingredient being shrimp paste or belacan which is available at Asian shops.

It is traditionally served on a banana leaf in Indonesia you can have it for breakfast lunch or dinner.. They shape the rice into a cone shape but i just used a dessert bowl to shape it

Broken Glass Jelly Pudding for a special occasion
An easy but decorative and economical dessert for a crowd enjoyed by kids and adults alike.

Recipe is in reel.
Ingredients:
6 or 7 jelly packets of different flavours and colours. I used raspberry, lime, lemon, boysenberry, blueberry and blackberry
1 can condensed milk dissolved in 1.5 cans water
50 g gelatine soaked in 1/2 c (125 ml water)
1 tsp vanilla
My tips:
1. Use only half the quantity of water prescribed in packed to set jellies so that they are firmer and you can cut them easily into shard shapes
2. Said the jellies overnight
3. Very lightly brush some oil in the bowls that you set the jellies and also the bowl/mould that you use to set the final pudding. This will help turn them out easily
4. Turn out individual jellies, Cut them first into strips then squares and then triangles so that you get good shard like shapes
5. Use a decorative ring mould or fancy mould for the jelly. I used a large glass dish as I made it for an occasion and my ring mould was way too small
6. Make sure to add different coloured jelly pieces and distribute colours so that one colour just show up together
7. Chill the final product overnight for bet results

Baked 2 batches of the yummiest cookies ever.

The Chocolate chip cookies of my dreams recipe by RecipeTin .

Recipe link in pinned comment.

Its not a difficult recipe but needs patience. 12 hours doygh chilling time was off putting but necessary. Worst was cooling on baking sheet for 20 mts before removing

But believe me, it's worth the anquish.

Honestly this is the best ever CCC on earth. Apparently created to be similar to the famous Butter Boys Bakery Sydney CCC . One cookie costs circa $ 8-9.

The other was Lemon , white chocolate and cranberry cookies which I created. I'll post that recipe as a separate post.

Today I am experimenting with a healthy seed cracker recipe. They are hellishly expensive so I decided to make my own. Watch this space.

Pinch salt if you need. I omitted it
Water. About 120 ml. Approximately

Place chickpea flour in a bowl.
Add the oil
Add leaves and rind
Add water little by little to form a better slightly thicker than hopper batter.
Brush a non-stick pan with some oil or use a griddle/ tawa as I did.
For about 2 tbsp on the griddle. I from the shape into oblongs
Cook until slightly browned and turn the other side and cook until done

I served this with a leftover paneer curry but you can have it with any curry.
