An elegant caramel custard cake

I made this caramel custard pudding cake that became popular a little while ago. I found this triangular cake/dessert mould and thought I should try this unique dessert

Ingredients fir the caramel

5 tbsps sugar
2 tbsps water

Ingredients for the custard layer:

3 eggs
1/2 cup condensed milk dissolved in
1/2 c boiling water
1 tsp vanilla

Ingredients for the cake layer:

2 eggs
1/3 c sugar
2 tbsps oil, i used Rice bran
1 tsp vanilla
1/2 c flour + 1/2 tsp baking powder

Baking time - 35-40 mts steam bake or steam.

Low carb meal

Mediterranean Quinoa salad

Salad Ingredients :

Cubed cucumber
Halved cherry tomato
Red onions sliced thin
Black olives
Cubed feta cheese
Cubed avocado
Place everything on.a bed of cooked quinoa. I used 1 rice cooker cup of quinoa cooked in 2 cups water.

Dressing
Juice of 1 lemon
Olive oil
Crushed garlic , 1 clove
Salt and pepper
A drizzle of white wine vinegar (optional )

Mix everything together just before serving
(In photos cant see the quinoa under the veggies as I mixed just before eating )

මේක මම හැදුවේ කීන්වා රයිස් කුකර් කප් එකකින් එකක් වතුර කෝප්ප දෙකකින් උයලා.

සලාදයට එකතු කළේ මෙන්න මේවා
කොටු කපාගත් පිපිඤ්ඤා
දෙකට කපාගත් චෙරි තක්කාලි
කළු ඔලිව් ගෙඩි කිහිපයක්
හීනියට කපා ගත් රතුළුණු ස්වල්පයක්
කොටු කපා ගත් අලි පේර ගෙඩියක්
කොටු කපා ගත් ෆෙටා චීස් ස්වල්පයක්

dressing එක හැදුවේ මෙහෙමයි

දෙහි ගෙඩියක යුෂ අරගෙන තෙල් මේස හැන්දක් දැම්මා ඒකටම තලා ගත්සුදුලූණු එකක් ලුණු ගම්මිරිස් දැම්මා. අවශ්‍ය නම් වයින් විනාකිරි ස්වල්පයක් එකතු කරන්නත් පුළුවන් අත්‍යවශ්‍ය නැහැ.
මේ සියල්ලම හොඳට කලවම් කරගෙන භාජනයක යටින්ම කීන්වා ටික අතුරා ගන්න. ඊට උඩින් එළවළු සේරම එකතු කරලා dressing එක වක් කරලා කලවම් කරගන්න පිළිගන්වන්න ඔන්න මෙන්න කියලා කියලා

මේක මම රෑ කෑමට පිළිගැන්නුවේ යා ෆ්‍රයි කරගත්ත සැමන් මාළු කෑලි දෙකක් එක්ක. මම මේ දවස්වල ලෝකාබ් කන නිසා ලෝකාබ් නොකන එක්කෙනාට අල කෑලි කීපයකුත් එයා ෆ්‍රයි කරලා දුන්නා

මේ මෙසේජ් එක ටික කාලෙකට කලින් මට ආපු එකක්.

සමාවෙන්න නංගි ඒකට මම ඔයාට පුද්ගලිකව උත්තරයක් ඇරියාට හදන ජාති පෝස්ට් එකකින් ගෙන්න ප්‍රමාද උනාට. ප්‍රියා නංගි සමාවෙන්න ඔයාව ටැග් කරන්න මට බැහැ. ඒ නිසා මම පෝස්ට් ටික ඔයාට එවන්නම්.

මේ පෝස්ට් එක කින්වා ගැනයි. Quinoa කියලා ලිව්වට ඒක උච්චාරණය කරන්නේ කින්වා කියලා.

මේක සුපර් මාකට් වලින් ගන්න තියෙන දෙයක් මම දන්න තරමින් ලංකාවෙත් තියෙනවා.

කීන්වා කියන්නේ බත් පාස්ටා අල වර්ග වෙනුවට කෑමට ගන්න පුළුවන් ාන්‍ය වර්ගයක්. දකුණු ඇමරිකාවේ තමයිි මේකේ නිජබිම.

කීන්වා වල ලොකු ප්‍රෝටීන් ප්‍රමාණයක් අන්තර්ගත වෙලා තියෙනවා ඒ වගේම තන්තු පොටෑසියම්, ඛනිජ ලවන වගේ ජාති හුඟාක් තියෙනවා කියලා කියනවා.

සුදු රතු හා දුඹුරු පැහැති කීන්වා ගන්න පුලුවන්. මෙහේ නම් සුදු රතු දුඹුරු එකට කලවම් කරපු කීවා එක ගන්න පුළුවන් සමහර සුපමාකට් වල.

කින්වා උයන්න කලින් කිහිප වතාවක්ම හොඳට සෝදලා දැල් පෙනේරයකින් පෙරලා ඕනෙ ගන්න. ඒ ඒකේ තියෙන සැපනින් කියන ‍ද්‍රවයය සේදිලා යවන්න.

සෝදපු කීන්වා කෝප්ප එකකට වතුර හෝ ස්ටොක් කෝප්ප දෙකක් ගන්න ඕනේ. සාස්පානකට ඔලිව් තෙල් හැන්දක් විතර දාලා කින්වා ටික බැදගන්නත්් පුළුවන්. නැත්නම් නිකම්ම කින්වා ටික සාස්පානකට දාලා කෝප්පයට වතුර හෝ ස්ටොක් කෝප්ප දෙකක්ෙන්නෙ එකතු කරලා විනාඩි දහයක් පහළොවක් විතර මදහින්නේ පියනෙන් වහලා උයාගන්න ඕනේ.

ඊළඟට ගින්දර නිවලා සාස්පාන පියනෙන් වහලා විනාඩි දහයක් විතර තියලා අවශ්‍ය විදිහට භාවිතා කරන්න පුළුවන්.

කින්වා වලින් මම කීප ජාතියක් මම හදනවා:
කීන්වා ෆ්‍රයිඩ් rice
කීන්වා සලාද

Sometime ago, a follower sent me a message askingme how to make quinoa.

Although i responded to her promptly it took me awhile to do a post about it so my apologies to Priya nangi.(sorry I cant seem to tag you but I will share the link)

Quinoa is a grain that has become popular lately in western countries as its low card and high in protein as well as potassium and essential minerals.

To cook it you need to.rinse it in water a five times and drain water to remove substance call saponin which need to be removed.

I usually add a teaspoon of olive oil.to.a psn and saute the rinsed quinoa and then add teice the amount of water (2 cups of water to one cup of quinoa ) and boil on low heat for 10-15 mts to cook. Then switch off heat and keep covered for 10mts and use it.

I use stock instead of water for a better taste .

There are many ways you can use it in cooking :

Quinoa fried rice
Quinoa salad
Mediterranean style quinoa salad
In soups
In porridge with seeds and dried fruit cooked milk or plant based milk

I will post a few recipes later.

Seeni sambal and egg buns

Made these seeni sambal.and egg buns using my usual.bread dough recipe ,home made seeni sambal.(spicy caremelied onion )and boiled egg halves.

If anyone would like the bread dough recipe please ask.in comments.

Making Payasam

Payasam is a delicious dessert made in Sri Lanka snd India.

This is my take on it.

Recipe

1/4 c sago, soaked for 20 mts
1 tbsp vermicelli sold as Sev in indian shops
1 tbsp semolina
Half c jaggery dissolved in 1/4 c water to make a syrup
A little ground cardamom
1 tsp vanilla - optional
2 tbsp ghee
3 cups milk. I used half almond milk and half thin coconut milk

පායාසම්

පායාසම් කියන්නේ ලංකාවේ ද්‍රවිඩ ජනතාව වගේම ඉන්දියාවෙත් හදන රසවත් අතුරුපසක්.
මේක නොයෙකුත් ක්‍රම වලට හදනවා. මුං ඇට වලින් පරිප්පු වලින් සව්,වර්මිසෙල්ලි රුලං ආදී නොයෙකුත් ජාති වලින් පායාසම් හදනවා.

මම අද හැදුවේ සව් රුලං සහ වර්මිසෙල්ලි දාපු පායාසමක්. frash milk වෙනුවට මම පාවිච්චි කළේ ආමන්ඩ් කිරි සහ තනුක කල පොල් කිරි. ඔයාලට කැමති කිරි වර්ගයකින් හදාගන්න පුළුවන්.

Cherry guava jelly

This is the season for cheery guava in NZ. it is very easy to make delicious jelly out of this fruit.

The reel doesnt have how the guava juice is obtained . My apologies as I have deleted those photos by mistake .

Wash cherry guavas well. Place in a pan andciver with water. Bring to a boil and simmer for about 10-15 mts. Cool. Extract the juice by straining the contents if the bag through a net bag/ jelly bag. DO Not, i repeat do not, squeeze out juice or the jelly will be cloudy.

Then for each 1 cup of juice add a 3/4 c jam sugar or normal white sugar with lemon juice.

Then boil rapidly and then simmer until.you reach the setting point. It took me around 65 mts of cooking time for 5 cups of juice.

My secrets to success is using jam setting sugar which is available here in supermarkets and using a sugar thermometer to reach the jam setting point.

Instead of jam sugar ou can use normal white sugar and add about 1- 2 tbsps of lemon juice to each cup.of juice.

To obtain the setting point, you can use the traditional method of testing on a cold plate. But I prefer modern methods and an easy life

Sri Lankan style biriyani lunch made over the long weekend

This is my tried and tested Biriyani menu.

Chicken biriyani
Tandoori chicken pieces
Pineapple curry
Mint sambal
Cucumber raita
Malay pickle
I made saffron eggs and garnished the rice. Sometimes I make a fried egg curry instead of the pineapple curry and serve sliced pineapple instead .

Dessert was Watalappan and a delicious Mari Biscuit pudding made by my visiting friend. Forgot to photograph the desserts

If you are out of Sri Lanka and you cant get juggary you can use Malaysian 100% palm sugar instead . This is how I make it.
