Ted's journey into the sauce industry began during his university days, working holiday shifts at the Boss Mint and Worcestershire Sauce factory in Christchurch. Later, while living in Wellington, he became skilled in preparing curry pastes. A passionate hot sauce enthusiast, Ted entered some of his favorite creations in the Waiheke Island Chili Sauce Festival. As an accomplished pizzaiolo, he has

mastered a variety of sauces used for pizza toppings and garnishes. Nowadays, Ted crafts an expanding range of condiments in his test kitchen on Waiheke Island, New Zealand. His repertoire includes:

Saucy Ted is delighted to report that 'Ted's Tingle BBQ Sauce' was voted the top Sauce in the "Sweet Sauce" category at the 2026 Waiheke Chilli Sauce Fest. Fellow sauce-maker (Patrick, wearing a red shirt in the background) was 2nd placed in another category with his 'Chilli Crunch'.

DESIGNED BY DISH🍽️, TWEAKED BY TED🌶️

Waiheke has an annual Chilli Sauce competition. For this year's entry I made a sauce which was based on the dish online recipe for Smoky Bourbon Barbecue Sauce, with a few tweaks. The main change was to dial back the tomato component and incorporate a variety of homegrown chillis - to keep it inline with a chilli-sauce theme. I also christened it with a different name, and hence, I present: Ted's Tingle BBQ Sauce. A fairly average photo, I know -- it's hard to make sauce in a jar look exciting. 😂🤣I might be biased as I think it tastes great, but the ultimate judging is done by public vote.

Another busy day in Saucy Ted's kitchen. I bottled a one litre batch of Ted and Perrins Worcestershire Sauce. And I also revisited my recipe for Chilli Oil, which nicely filled my 500ml pourer. This delicious oil with a subtle heat level goes great on pizzas and pasta dishes. Bon appetite!

I'm making a Guinness Glaze for the first time today. It's going to used for next week's pizza night at the Good Times Pizzeria— which features a Sausage and Stout pizza with a Guinness Drizzle. All in the day of a sauce maker (that loves beer and pizza).

Happy International Hot and Spicy Food Day everyone. Saucy Ted will be marking the occasion with a 'Tedasco' spiced Bloody Mary, followed by a handmade pasta dish doused with a Chili Oil made last weekend.
