One thing I love about growing food is making delicious sauces and preserving for those cold months when you long for summer to arrive quickly. This Summer Harvest Sauce uses a range of fruit and veg, it really is a game changer! I use anything that’s over ripe, or I have too much off to be eaten straight from the garden. Simply spread ingredients onto a baking sheet, tomatoes, peppers, herbs, courgettes, pumpkin, onions, garlic anything like that and even chillies if you like it spicy like we do. Drizzle with olive oil and season with pepper and salt. Bake in an oven at about 200c until soft (I usually do 30mins or so on bake not fan). Process in a food prior with a wand and freeze ready for winter use. 💚
