Before the first bottle of Taizi, there was a lot of persuading.

Sam Lu spent more than three months convincing master distiller John Fitzpatrick of Southern Grain Spirits to take it on. Together they worked with an original 1850s John Dore copper still, bringing Chinese distillation science and Western engineering together. That's the maker's plate in the photo.

The first production made 24,000 bottles.

This old tin has a story.

In 2013 we were getting the first Taizi prototypes ready for the Guangzhou W**e and Spirit Expo. Our signature purple caps were still on their way from France, and all we had were plain grey samples.

So Sam went to a local panel be**er, who found the right shade of royal purple. Then Sam painted each cap by hand.

He's still got the paint.

Getting a small New Zealand spirit onto duty-free shelves isn't quick.

For Taizi it took thirteen months of evaluation before Lagardère Travel Retail's head office in Paris said yes, back in 2017.

Still makes us grin seeing it lined up next to the big names.

Every bottle of Taizi starts in Christchurch, in a copper still that's been around since the 1850s.

It's a John Dore still, and these days it's where Taizi is distilled, a light-aroma baijiu bottled at 58%.

Old copper, a new spirit, and a South Island address. That's a nice combination to have on the shelf.

The two gold characters on every Taizi box weren't typed out. They were written with brush and ink.

When the Lu brothers were naming Taizi, they went to Jing-Yao Zhang, a former Honorary President of the Taiwanese Calligraphy Association. He only agreed to write 太紫 (Taizi) after he'd studied the number of strokes in the name.

The smaller line underneath, 新西蘭高粱酒 (New Zealand Sorghum Spirits), is by a different hand: a church elder and master calligrapher.

So there's a bit of story in it before the box is even open. Have a closer look next time you see one.

That’s how most people first meet baijiu — not iced, not drowned in mixer. Just enough in the glass to smell it before you taste it.

Made in Christchurch. Taizi is the world's first Western-made baijiu.

It starts with New Zealand wheat, Australian sorghum and Southern Alps artesian water, then goes through a historic 1850s John Dore copper still.

The result is a clear, refined light-aroma baijiu. Berries and licorice on the nose, bold berry on the palate, and a smooth licorice finish with subtle herbal undertones. One to savour slowly.
