You can’t have a bbq without potato salad. Try this French inspired recipe with vinaigrette, lots of herbs and cornichon - you won’t ever go back to mayo!

VINAIGRETTE
* 1/2 cup olive oil
* 1/4 cup of vinegar (use your favorite vinegar or particularly good is a herb vinegar)
* 2 heaped teaspoons of Dijon mustard (grainy or strong)
* At least a cup of your favorite herbs - parsley, basil, thyme, rosemary, chives, tarragon or dill or a mix.
* Optional 2 teaspoons honey or maple syrup
* Mix all ingredients together in a jar or bowl. Season with salt and pepper and adjust according to your taste

Cook 1-1.5kg baby potatoes in boiling water. Mix the vinaigrette with the cooked potatoes gently so potatoes don’t break up too much. Top with approx 1 cup of diced cornichon (gherkin)
