Continuing this week’s keto theme, here’s an ultra low carb pizza method. Place baking paper on a large flat oven tray then spread a thin but continuous layer of frozen cauliflower rice over the paper into a pizza shape, add ground pepper and a cup and 1/2 of grated cheese, a sprinkle of herbs and chicken salt. Bake in pre heated oven at 180 until cheese has browned (check after 15 min)

Remove tray from oven and add crushed garlic, slices of chopped chorizo, chopped chives, thinly sliced onion, halved stoneless olives, sliced mushrooms and grated cheese then return to oven and check after another 20 min

When ready remove from oven and allow to cool somewhat then cut the pizza with a pizza wheel. The pizza illustrated served two with virtually no carbs

Another hot day so fancied something quick and low carb.

Caramelise thinly sliced onions in olive oil then set aside. In the residual oil fry chopped bacon, add smoked paprika and shards of lemon zest, then add halved Brussel Sprout and increase pan heat stirring often. Add fish sauce and lime juice and fry until sprouts are cooked but still firm to bite. Combine the onions then serve in a bowel with grated Parmesan and a drizzle of seasame oil, finish with ground pepper. This dish is delicious and virtually no carbs at all !

So after the film industry ‘Share the Knowledge’ graduation it was time for some keto treats.

Oil a baking tray and add ground pepper to each tray cup along with some finely chopped onion and bacon. Beat eggs and pour nearly to the lid, add a few mixed herbs then sprinkle smoked paprika and grated cheese on top. Bake for 30 min at 180 degrees.

The savoury ‘muffins’ were then sliced and placed onto a keto wrap with sliced tomato, lettuce and mayo - really quite delicious and maybe 2 or 3 carbs!

A cold rainy day is just perfect for pumpkin soup - this time with a difference! I noticed a few recipes include curry powder but I had some fresh jalapeño and a parsnip and what a game changer they proved to be.

In a large saucepan fry 1.5 onions In olive oil until opaque then add 4 chopped jalapeños and stir. Peel and chop a parsnip, carrot and potato and add to the pan along with ground black pepper, 4 cups of chicken stock and 4 dessert bowls of chopped pumpkin and 3 bay leaves. Combine ingredients and make sure the stock just covers everything. Once the pan comes close to the boil reduce temperature and simmer for an hour stirring occasionally so nothing sticks. Once it’s cooked remove the bay leaves and mouli with a kitchen whizz to reach desired smooth creamy texture. I served it with a swirl of cream, grated nutmeg and fresh chopped parsley garnish (not shown here) The photo is my brunch next day with toast.
