We were so privileged to be asked to guide who we perceive as Britain's number one forager, Fern Freud, .by.fern, on a foraging tour around Whakaraupō. We connected straight away and had the most beautiful day sharing knowledge and having lots of laughs. Fern is genuinely connected to nature, humble, and has an admirable knowledge base in so many facets of foraging, from species' identification, to conservation and philosophy. Thank you Peter for fishing and kānuka hot-smoking the delectable high country rainbow trout the day before, and to Fern for such a memorable experience 🌿

Linden flower tea (Tilia spp.) - so easy! A sweet, floral herbal tea with anti-anxiety and digestive aid effects. Sun dry a branch of flowers/bracts upside down, which looks very decorative hanging in any sunny window. When you feel like a cuppa, pull off a handful of dried flowers & bracts per cup and steep in boiling water for 5 minutes. No need to add sweetener 🌼 The young Linden leaves from the suckers at the base of the tree can also be used as a lettuce substitue - look out for the reddish tinged, almost translucent leaves which are sweet and succulent 🍃

Love elderflower cordial, but not the sugar content? Dehydrate elderflower now - in most areas in Aotearoa, the full pollen season will only last another two weeks or so. Rehydrate flowers (stripped from stems) in boiling filtered water for 5-10 minutes, strain, then add a squeeze of NZ honey and some organic lemon or lime juice. Top with sparkling water and ice, garnish with a sprinkle of dried elderflowers. Add gin or vodka for a sophisticated cocktail 🍹
