Rump cap is an excellent option for an affordable roast. As it cooks, the fat layer slowly melts, naturally basting the meat and creating a tender, flavour-packed result. And despite its impressive outcome, it’s surprisingly simple to prepare.
METHOD:
1. Score the fat, try to avoid cutting into the meat underneath.
2. Sprinkle 1 tablespoon of salt flakes and a good crack of fresh black pepper over the flesh side. Flip the rump and season with 1 tablespoon of salt flakes and another good crack of pepper.
3. Place the rump on a rack, on a baking tray.
4. Pre-heat oven to 120C fan-forced. Insert an oven safe thermometer (if using) into the thickest part of the rump cap. Cook the roast for 45 minutes - 1 ¼ hours or until the thermometer reads an internal temperature of 48C.
5. Remove the rump cap from the oven and cover lightly with foil, rest for 25-30 minutes.
6. Just before serving, turn the overhead grill to high. Place the rump under the grill for 3-4 minutes to make the fat golden and crispy.
Slice and serve. 👌😎👏
