Did you know that properly cooked corn tortillas puff during cooking?
That perfect puff separates the tortilla into two thin layers, making it much more soft and flexible when folded, and allowing the trapped moisture to steam the interior, resulting in a thorough, even cook, and superior texture.

When was the last time (if ever!) you had a corn tortilla in New Zealand that opened like a pita and was perfectly soft and pliable ...😋

Baja style fish tacos: fresh snapper marinated in Mexican chilis & spices, fried in a crispy honey-beer batter, served on a bed of jalapeno-lime crema coleslaw and topped w/salsa fresca

Michoacán style pork carnitas w/chipotle roasted tomatillo salsa & house-made yellow corn tortillas

Jalisco style lamb birria w/fresh cilantro & a delicious, melting Oaxaca style cheese

Puebla style tacos al pastor: pork shoulder marinated in citrus & a blend of chilis, spices & achiote paste, served w/chopped, caramelized pineapple, fresh white onions, cilantro, and fresh pineapple-tomatillo salsa.

Hi everyone,

Just a quick update on our status.
We're healthy and expecting to open one night this weekend, once we confirm when our helper is available. However, more and more people around us (peripherally) are testing positive for Covid, so please be mindful that at any point, because our crew is so small, we may have to close for normal weekend service on very short notice if we lose staff, or test positive ourselves.

So far we've managed to avoid contracting Covid, and want to keep it that way, for as long as possible! 🤞

But, it is definitely orbiting closer and closer to us. 🤨
