Creamy mushroom risotto meets the elegance of Pinot Noir.

There’s something about a warm bowl of mushroom risotto that feels like comfort in every bite, rich, earthy, and deeply satisfying.

Creamy Mushroom Risotto Recipe.
Ingredients:
• 1 cup arborio rice
• 250g mushrooms, sliced
• 1 small onion, finely diced
• 2 cloves garlic, minced
• 4 cups warm vegetable or chicken stock
• ½ cup parmesan cheese
• 2 tbsp butter
• Olive oil
• Salt & pepper
• Fresh herbs to finish

Method:
1. Sauté onion and garlic in olive oil and butter until soft.
2. Add mushrooms and cook until golden.
3. Stir in arborio rice and cook for 1–2 minutes.
4. Slowly add warm stock, one ladle at a time, stirring continuously.
5. Once creamy and the rice is tender, stir through parmesan.
6. Finish with herbs, cracked pepper, and serve warm.

Best enjoyed with a glass of Mount Michael Pinot Noir alongside.
