Southern Clams Limited

Southern Clams Limited Southern Clams harvest a wild population of New Zealand Tuaki clams from the Otago Coast in New Zealand.

We care about the environment, and our approach to harvesting clams in the cool, clear waters maximizes sustainability for the fishery.

Step 7 - purchase some clams from your fishmonger of choice and get to cooking. Try this clams casino recipe - wash the clams, steam them open and then present the clam on the half-shell. Add in red onion, bell pepper and top with bacon before grilling in the oven. It doesn't get much better than this!

Step 6 - Make sure any juvenile clams, other shellfish species and seaweed gets put back into ocean. We'll be back to harvest these clams in about 3 years when they've grown.

Step 5 - After the final round of hand-grading and quality checks, it's time to prepare the clams for sale in New Zealand or overseas - bag 'em and tag 'em!

Step 4 - Every single clam sold gets hand-sorted by our experienced staff. The rumor is that they are able to tell whether a clam is good or not just by the sound it makes while rolling.
