Environmental impact series
Overview
We often get asked about what we do over the Winter months when we are not open to the public. This is a time when we take a break but also work on improvements, upgrades, new ideas and preparations for the season ahead. We have always considered the environmental impacts of our operations and look to improve this area of our business wherever we can. This year we have invested in quite a significant upgrade to the property. This got me thinking that we should do a little series of how we put our environmental principles into practise, and how this benefits us all.
1. Wood
So, I was standing looking at this incredible view when I had the idea of doing this little series. Anyone who is using a fireplace to heat their home will know just how expensive good wood is. We absolutely rely on well-seasoned, hot burning wood for our pizza ovens. As we are surrounded by vineyards and grape wood is an excellent hard wood, it is our main pizza oven fuel. We spend a fair amount of time sourcing, collecting, transporting, and processing vines. This has taken us to some beautiful areas of Hawkes Bay but this week I am literally across the road from our property, and you can’t get closer than that. Instead of this resource being piled up and burnt we can make use of it. We now have 3 local Maraekakaho properties that we are sourcing this season’s wood from. Two of these are supplying us with grape vines and one has been supplying us with very well-seasoned olive wood for years now. Massive thanks to Lucia, Glencoe Estate and the Sorenson family.
