Back Country Cuisine

Back Country Cuisine Fast nourishing food for adventure! How to carry everything in a pack needed for a full-on extended back country trip, without compromising nutrition?
(1)

Back Country Cuisine is a large range of meals from real whole foods, using freeze drying to reduce the weight of the food, while locking in the tasty flavour and nutrition. This is the question posed by the military and outdoor enthusiasts back in 1950s New Zealand (NZ) that ultimately led to the creation of Back Country Cuisine. Back then in NZ, light weight outdoors gear didn’t exist; everythin

g was heavy. So, from the 1960s onwards the focus went on reducing the weight of outdoors gear, which is where the Back Country Cuisine story starts with The Alliance Freezing Company (Southland) Limited freeze drying Beef. By the 1990s The Alliance Freezing Company had changed its ownership structure to be a cooperative, changed its name to the Alliance Group and re focused on core business. So Back Country Foods Ltd was established in August 1998 to take over the freeze-dried meal business founded by the Alliance Freezing Company. Since 1998, we’ve taken freeze dried food to the next level by focusing on, and growing with, adventure sports. Developing the large range of meals and accompaniments we have today, that meet the low weight, high nutritional needs of even the most demanding adventure racers. "The oversized meals were HUGE, we couldn’t eat one between us. The gravy of the roast beef meal is top tier, especially after being out in the snow! We also left a handful of meals in the wardens’ quarters for the next people."

Nick and Zoe took part in the Department of Conservation volunteer hut warden programme last month at Angelus Hut. Consider this our appreciation post for a pair of truly epic adventurers👏

BACK COUNTRY CUISINE ADVENTURE //
📍 Malte Brun // Zach Preston

"Climbing Malte Brun requires a bit of walking. This was Liv’s first time up the Tasman, which helps to mask the gruelling slog of nearly 30km each way of moraine.

As this was my 5th time on the Tasman, I fondly remembered all the loose moraine, shifting terrain, and vert to come. Despite that, there’s something I love about going out there.

We descended from Ball Shelter down the infamous ‘Garbage Gully’, which is the loose name given to the easiest-looking descent down the moraine.

Once down, we made our way up the Tasman Glacier and made a bivvy site just before Darwin Corner. The next day saw a 5am start to climb up the moraine wall to access the Bonnie Glacier.

An overnight freeze meant travel was fast, and we started up the Bonnie Rib just after sunrise. Malte Brun offers some of the best and most exposed alpine scrambling in the country. It’s obligatory to get a shot of the famous cheval on your way up.

Whilst we expected summer conditions, recent snowfall had left a layer of unconsolidated snow on top of the thin scree on the West Ridge at about 3000m.

Having already completed the best of the climbing, we decided to turn back 60m below the summit and save that part of the climb for our next time out here later in the season.

The best part of walking out of the glacier is that you find all kinds of things, including old climbing gear, overturned monitoring stations, and a few ice caves.

The cherry on top was that this time, Liv and I decided to start this trip with mountain bikes. Whilst they’re a slog to ride up, the sweet downhill out of Ball Road on the way out is the best possible way to end the trip."
