I’ve been on a mission to spend $250 or under a week for our family of 5. Here is some of the things I made the last week with the help of eggs from our chickens and some goodies from the garden. As long as you have the staples like flour, milk, eggs, butter and sugar you can make a ton of things 🍅🍳🥓🥟

Haven’t posted on here in ages as life’s been hectic with moving house and everything going on, but I’m still making budget meals and snacks and thought I’d share because these are so good and super easy.

Even better at the moment for us as we now have laying chickens! 🐓🥚

I had 4 pre cooked sausages left, 7 eggs, a splash of milk, grated cheese and a bit of homemade tomato relish.

I cut the sausages up and fried them till crispy, put some in the bottom of muffin trays, whisked my eggs and added a splash of milk then poured the egg mix on top of sausage pieces and then added a bit more sausage, sprinkle of cheese and a spoon of homemade tomato relish on top.

Chucked them in the oven till cooked and that’s it.

They’re yum as hot or cold 🤗

Last day of Woolworths 3 day sale. Some good bargains there!

Their home brand baked beans and spaghetti 3 for 99cents! Tuna cans $1 each (my kids love these tomato and basil ones in their lunch with some crackers) bags of avocados for $3 and 2x Cadbury blocks for $5 😊

I’m still here! Just been a bit slack with the recipes!

Here is another under $20 meal to feed 6–7 people. A cheats macaroni cheese. Perfect for when you are short on time as there’s no need to make a roux. The mascarpone works as the thickening sauce and then you just add grated cheese to taste. I don’t think I’ll even bother with a traditional cheese sauce anymore because this is so much quicker and just as tasty.

All you do is fry off your bacon and onion, cook your macaroni, then while the pasta is hot stir through the bacon, onion and mascarpone. Season to taste and add as little or as much grated cheese as you like. Dinner done in no time!

We recently had a pig butchered and if you’re ever in a position to buy meat in bulk like that, it really does work out so much cheaper and keeps the freezer full for ages.

The other night I made my own take on Swedish meatballs using some of the pork mince. I don’t follow recipes (intuitive cooking is my thing!) so I just wing it and taste as I go and according to my husband my sauces have been on point lately so I’ll claim that 😆 Usually you’d start the sauce with a roux, but I used cooking cream instead which thickens really well without the extra step making it a reasonably quick meal especially if you made the meatball mix the night before or in the morning.

This meal was so tasty and most of the ingredients are pantry staples anyway. I had planned to serve it with mash and broccoli but we’d run out of potatoes, so spaghetti it was which is cheaper anyway and still delicious 😋 🍝

I’ve been a bit slack on here lately, life’s been busy with the business and family! I’ve even made some good meals and then completely forgot to take photos 🤦🏻‍♀️ but anyway… my latest bargain is an air fryer!

I grabbed one for $50 in a Briscoes sale the other week😆 How have I never had one before?! It’s so easy and fast! I’ve always been a carb heavy deep fryer girl but I’m trying to be a bit healthier. Lately I’ve been marinating heaps of chicken breast and chucking it in the air fryer and it comes out juicy every time. Then i use the leftover for sandwiches and wraps and it works out way cheaper than buying those packs of shredded herbed chicken from the supermarket 👌🏻

This easy mince dish costs around $20 and feeds 5 to 6 people. You can use any pasta but I really like the texture of these lasagne ones. I use the cheapest canned tomatoes (about 80 to 90 cents each) but they can be a bit acidic so I will always add a spoon of sugar.

I added in some mushrooms to bulk it out and sneak in a few more veges. Got a whole bag from Produce Pals in Ashburton for $2.60 which was such a good score!

I chuck in an extra cup of pasta and a bit more liquid than the recipe calls for, and finish it off with a dash of cream or cooking cream at the end.

All done in one pot so super easy and less dishes. It might not look like anything flash but it’s bloody delicious!

Bit of a different bargain today, not food but still too good not to share.
If you’re local to Timaru, make sure you check out the SPCA op shop in Washdyke. It’s one of my favourite spots and always worth a look as the stock is always changing.

I scored this cool top for just $6 and the dress underneath was off the warehouse clearance rack for $4.98. How good. Also managed to grab 6 brand new pairs of socks there for the kids, still with tags on for only 50c each 👏🏻

A quick and easy breakfast or lunch idea for the freezer!

My husband is away for work a lot so I need plenty of grab and go options or he ends up buying pies and energy drinks every day 😱 and all those bought options soon add up!

These bacon and egg McMuffins cost under $30 for 12, even less for me with some gifted free range eggs 😍 They come in around $2.50 each and much cheaper than maccas! Wrap them individually, freeze, then eat cold or reheat in the microwave or sandwich press. They freeze really well.
