Here is a quick, budget friendly and comforting recipe for a Potato, Onion and Cheese Pie that uses store-bought ready-rolled pastry sheets (either puff or shortcrust) and everyday standard cheddar cheese.

Ingredients

* 2 sheets of ready-rolled pastry
* 400g (about 3 medium) potatoes, peeled and cut into small cubes
* 2 medium onions, peeled and thinly sliced
* 150g grated cheese
* Butter or Oil: 1 tbsp) for frying the onions
* Salt and freshly ground black pepper to taste
* 1 beaten egg

Instructions

1. Preheat oven to 200°C / 180°C fan (Gas Mark 6) and line a baking tray with baking paper.
2. Place your cubed potatoes in a pot of salted water, bring to a boil, and cook for about 10–12 minutes until tender. Drain well and leave to cool in a bowl.
3. While the potatoes cook, melt the butter in a frying pan over medium-low heat. Add the sliced onions and sauté slowly for 8–10 minutes until soft, sweet, and golden.
4. Filling:
* In a large bowl, combine the drained potatoes and cooked onions.
* Add grated cheese and a generous pinch of salt and pepper.
* Gently mash or mix everything together (you want it chunky rather than completely smooth).

Important: Let the filling cool down for about 10 minutes so it doesn't melt your pastry.

5. Assemble the Pie:
* Place a sheet of pastry into a baking dish. This will serve as your base.
* Spoon your cooled potato, onion, and cheese mixture into the centre of the pastry base, leaving a clear border around the edges.
* Brush the empty borders with a little of the beaten egg.
* Lay the second sheet pastry directly on top of the filling to form a lid.
* Press the edges firmly together to seal.
* Cut a small slit or two into the top pastry lid to let steam escape during baking.
* Brush the entire top surface generously with the remaining beaten egg for a golden finish.
* Bake in the oven for 30 to 35 minutes, or until the pastry is puffed, deeply golden brown, and crisp.

5. Serve
* Allow the pie to rest for 5–10 minutes before slicing into portions. It is delicious served warm on its own or alongside a salad.
