Sweetcorn fritters with Spicy Tzatziki
Tzatziki:
1 cup Greek yoghurt
1/2 cup finely grated cucumber, liquid squeezed out
1 tbsp lemon juice
1 garlic clove, grated
2 tbsp fresh dill, chopped
2 tbsp fresh mint, chopped
1 tbsp PUNCH crispy bits
1/4 tsp sea salt
Corn fritters:
2 cups of whole corn kernels
8 tbsp milk
1 large egg
3/4 cup spring onions, chopped
1 cup cheese, grated
1 tsp apple cider vinegar
1 1/2 tsp sea salt
2 tsp onion powder
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp baking powder
Freshly ground pepper, to taste
3/4 cup corn meal
1/2 cup flour
Mix all tzatziki ingredients in a bowl and leave in fridge until serving time.
In a large bowl, whisk together milk, egg, cheese, corn, onion and apple cider vinegar.
Add flour, corn meal, onion and garlic powder, paprika amd baking power and mix together well.
Fry in olive oil over a medium head, until golden. Served immediately with the spicy tzatziki ๐ถ
