Sweetcorn fritters with Spicy Tzatziki

Tzatziki:
1 cup Greek yoghurt
1/2 cup finely grated cucumber, liquid squeezed out
1 tbsp lemon juice
1 garlic clove, grated
2 tbsp fresh dill, chopped
2 tbsp fresh mint, chopped
1 tbsp PUNCH crispy bits
1/4 tsp sea salt

Corn fritters:
2 cups of whole corn kernels
8 tbsp milk
1 large egg
3/4 cup spring onions, chopped
1 cup cheese, grated
1 tsp apple cider vinegar
1 1/2 tsp sea salt
2 tsp onion powder
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp baking powder
Freshly ground pepper, to taste
3/4 cup corn meal
1/2 cup flour

Mix all tzatziki ingredients in a bowl and leave in fridge until serving time.

In a large bowl, whisk together milk, egg, cheese, corn, onion and apple cider vinegar.

Add flour, corn meal, onion and garlic powder, paprika amd baking power and mix together well.

Fry in olive oil over a medium head, until golden. Served immediately with the spicy tzatziki ๐ŸŒถ

Spicy Chicken and Pineapple Skewers

Marinade:
3 garlic cloves, minced
3 tbsp soy sauce
2 tbsp PUNCH oil
1 tsp dried oregano
3/4 tsp brown sugar
1/2 tsp onion powder
1/2 tsp garlic powder

Chicken thighs, cut into pieces
Brown onion
Capsicum
Pineapple, fresh + chopped

Mix marinade in a bowl, add chicken and place in Friday ideally overnight, or a couple of hours.

Thread chicken, onion, capsicum and pineapple onto skewers.

Fry in a cast iron pan ๐ŸŒถ

Chimichurri

1/3 cup extra virgin olive oil
3 tbsp white wine vinegar
1/2 cup parsley, finely chopped
3 tbsp fresh oregano, finely chopped
2 cloves garlic, minced
1 tbsp PUNCH crispy bits
1 tsp coarse salt

Mix all ingredients in a jar and leave to sit for 5 - 10 mins (ideally 2 hours or longer if time allows).

Serve over charred steak, chicken thighs or any kind of BBQ'd meat ๐Ÿฅฉ๐ŸŒถ

Crispy Pork Rice Paper Rolls

Rice paper sheets
Pork mince
Garlic, minced
Ginger, minced
2 tbsp sesame seeds
4 tbsp soy sauce
2 tbsp fish sauce
2 tbsp sesame oil
1 heaped tbsp PUNCH crisp
1/2 tspn brown sugar
2 handfuls of Asian slaw
Vermicelli noodles (cook to directions on packet)

Cook pork mince then add garlic, ginger and slaw and cook until softened. Add sesame seeds, soy sauce, fish sauce, PUNCH and brown sugar. Cook for a few minutes until fragrant. Add cooked noodles.

Dip rice paper in cold water, lay on chopping board. Wait 30 seconds. Place some pork mixture on and then roll.

Roll in sesame seeds and then fry until crispy. Serve with PUNCH oil for dipping ๐ŸŒถ

Spicy Chicken Taquitos

12 corn tortillas
250g cream cheese, spreadable
2 tbsp taco seasoning (we used )
1 tsp ground cumin
Freshly cracked pepper
Heaped tablespoons of PUNCH crisp
1.5 cups grated cheese
Chopped coriander
3 cups shredded chicken

Mix all ingredients (except tortillas) in a bowl.
Heat fry pan with a good glug of olive oil.
Shallow fry until golden.
Serve as is or with sour cream/ guacamole ๐ŸŒถ

Spicy Tomato Burrata dip with Sourdough Crostini

Dip:
Cherry toms
Olive oil
PUNCH
Garlic
Basil
Dried mixed herbs
Salt + pep
Burrata - we used Massimo's from

Crostini:
Sour dough - we used Organic Rye loaf from
Melted butter
Garlic
Parsley

In an oven safe dish, toss tomatoes in olive oil, PUNCH oil, garlic, basil, dried herbs, salt + pep. Place in oven at 180c and bake for 10 - 15 mins.

While the dip is baking slice bread, and brush on garlic butter mix. Bake in oven until crispy.

Remove dip from the oven and add the burrata and PUNCH (crispy bits) and stir. Serve immediately ๐ŸŒถ
