Professional aquarium mermaid. Swimming with fish and chatting to kids through the glass in sign language. If that job exists in New Zealand, Pip, please don't be surprised when I ask for school holiday leave!!

Eight years ago, I said my dream wine destination was New Zealand. Today I work at a Martinborough winery, so I'd say I'm ticking off my bucket list dreams pretty well.

We are thrilled to once again be recognised by Cuisine Magazine at the 2026 Good Food Awards.

Behind every service is a team of passionate people dedicated to crafting memorable experiences through exceptional food, wine and hospitality. This recognition belongs to every member of our team, whose hard work, creativity and commitment make Palliser Kitchen what it is. We are so grateful to our Ōra King salmon ambassador Chef Norka Mella leading our kitchen team, and to our sommelier and Andy leading our front of house team.
