Paired with a fresh, zesty lemon yoghurt dip, they make the perfect snack, side, or platter star.

Prep time: 20 mins
Cook time: 15 mins

INGREDIENTS 🥚 (serves: 2-4)

For the courgette fries:

2 medium courgettes
½ cup Fogdog GF Tasty Tempura Batter
2 eggs, lightly beaten
1½ cups Fogdog Gluten Free Breadcrumbs

Cracked black pepper, to taste
Olive oil spray or a drizzle for baking

Pinch of salt

METHOD 🧑‍🍳

1. Preheat your oven to 200°C (fan bake)

2. Slice courgettes into thick fries or batons (about 1cm wide).

3. Pat dry with a paper towel to remove excess moisture.

4. Set up your crumbing station with three bowls: Tasty Tempura Batter, beaten eggs and GF breadcrumbs

Spring in Aotearoa means one thing: asparagus is back! 🥳 But have you ever tried tempura asparagus?!

1. Snap the woody ends off and pat the spears completely dry.

2. Mix 1 cup of Fogdog Gluten Free Tasty Tempura Batter with ¾ cup of iced water until it's the consistency of runny cream.

3. Drop a little batter into very hot oil to check it fries instantly. Dip each asparagus spear in tempura batter then lower into the oil, without overcrowding the pan.

4. About a minute later, when the batter turns pale golden, they're done.

5. Drain, squeeze over some fresh lemon, and dip in mayo.

Our Tasty Tempura Batter is light, crisp and doesn't taste gluten free, which was the whole point. It's just as good on fish, prawns and whatever else is in the veg drawer.

Find it at most good supermarkets and specialty food stores.

😘 Stuffed Capsicums with Crispy Breadcrumb Topping 😘

Stuffed capsicums are a dinner classic – colourful, satisfying, and easy to make. This version comes with a delicious twist: a crispy breadcrumb topping that adds texture, flavour and a little wow factor.

It’s the perfect mix of soft, savoury filling and golden crunch. Think: bubbling cheese, juicy roasted capsicums, and Fogdog Premium Panko Breadcrumbs topping that crackles with every bite. Whether you're feeding a crowd or making dinner stretch an extra night, this recipe is a weeknight winner.

INGREDIENTS 🧅 (serves 2-4)

For the capsicums:

4 large capsicums (any colour)
1 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
300g ground beef, lamb or plant-based mince
1/2 cup rice, cooked
1/2 cup tomato passata
1/2 tsp dried oregano
1/2 tsp smoked paprika
Salt and pepper, to taste

For the crispy topping:

1/2 cup Fogdog Premium Panko Breadcrumbs
2 tbsp melted butter or olive oil
2 tbsp grated parmesan (optional but delicious)
1 tsp dried herbs (e.g. parsley, thyme or Italian seasoning)
Pinch of salt

METHOD 🧑‍🍳

1. Preheat the oven to 180°C.

2. Cut the tops off the capsicums and remove the seeds and membranes.

3. Rub the outside lightly with olive oil and place upright in a baking dish.

4. Heat olive oil in a pan over medium heat. Add onion and garlic and cook until soft (about 3–4 minutes).

5. Add the ground meat and cook until browned. Season with oregano, paprika, salt and pepper.

6. Remove from heat. Stir in the cooked rice and tomato passata. Mix until everything is evenly combined.

7. Spoon the filling into the prepared capsicums, pressing down gently to pack them full.

*Any leftover filling can go in the fridge or freezer.

8. In a small bowl, combine breadcrumbs, melted butter (or olive oil), parmesan, herbs, and a pinch of salt. Mix well until coated.

9. Sprinkle the breadcrumb topping generously over each stuffed capsicum.

10. Bake uncovered for 30–35 minutes, or until the capsicums are tender and the topping is golden and crisp.

11. Garnish with fresh herbs. Serve warm with salad or roasted vegetables.

😋 Crumbed Lamb Cutlets with Parsley Pesto 😋

Crispy, golden lamb cutlets paired with a vibrant homemade parsley pesto – this recipe is all about simple ingredients done right...

INGREDIENTS 🌿 (serves 3-4)

12 lamb cutlets*
Half packet of Fogdog Gluten Free Breadcrumbs
2 eggs, whisked
1 cup white or wholemeal flour
Olive oil for frying
*If your cutlets are more than 1cm thick, cover them with plastic wrap, place on a chopping board and bash them with a rolling pin, to make them slightly thinner.

For the parsley pesto:

40g flat-leaf parsley
40g pine nuts (or cashew nuts), toasted
60g parmesan cheese, grated
2 cloves garlic, minced
80ml extra virgin olive oil
2 Tbsp lemon juice freshly squeezed
Pinch of freshly ground salt and pepper

METHOD 🧑‍🍳

First the pesto:

1. Toast the pine nuts in a dry pan over medium heat until golden, then set aside to cool.

2. Place the parsley, pine nuts, and minced garlic in a food processor and pulse briefly – no more than 30 seconds.

3. Add the grated parmesan and pulse again for about 5 seconds.

4. Switch your food processor to a low speed and slowly drizzle in the olive oil through the spout, until fully combined.

5. Stir in the lemon juice and season to taste.

*Use the pesto immediately, or transfer it to an airtight container. Store in the fridge for up to 4–5 days.

Now for the lamb cutlets:

1. Dust each lamb cutlet evenly in flour, then dip in egg wash, then the breadcrumbs. Make sure the cutlets are evenly coated in breadcrumbs, then transfer each one to a clean plate. Repeat the process with the rest of the cutlets.

2. Pour olive oil into a large frying pan to a depth of 2 cm and place over medium-high heat. To test if the oil is ready, drop in a small piece of bread – it should sizzle and turn golden within 30 seconds.

3. When the oil is ready, add 3–4 cutlets to the pan at a time. Fry for about 3 minutes on each side, or until golden and crisp. Transfer the cooked cutlets to a cooling rack to drain excess oil and keep the bottoms from going soggy. Repeat with the remaining cutlets.

4. Serve the cutlets with a drizzle of parsley pesto. Enjoy!
