Meteorologically speaking, Spring has officially sprung🌼(yay!) and I'm looking forward to some warmth and sunshine. I'm sure you'll agree that there is nowhere quite like the 'Naki on a beautiful spring day.
Overseas visitors to our stall are quite amazed when I tell them that we can be up the mountain skiing in the morning and down at the coast surfing in the sunshine in the afternoon No not me - I'm a little too old and round for that malarkey😂, but you could if you wanted too!
I'm a little more suited to a gentle stroll around the many free beautiful parks, gardens and walkways - phone charged to snap a pic or two (hundred). Our mountain always ends up in there somewhere.
The sheep in the back paddock are just about ready to pop, so there will be some delightful little lambs spronking around the field very soon.

Hoping all you good peeps are keeping warm and well 👨‍⚕️
There are so many nasty bugs going around - Expected perhaps at this time of year but these seem to be hitting harder, lingering longer and coming around more than once.
Are the bugs getting stronger?
Or are we getting more and more depleted of our natural defences so they can get a better hold?
Lots of prebiotics and probiotics in our diet is the key to a healthy gut, which (according to science) is the key to a stronger immune system 😊
I'm posting a Pinterest HONEY LEMON PRESERVE recipe today so if you can't make it down to the Farmers Market tomorrow to grab a jar of our RAW HONEY THROAT SOOTHER, and you have the ingredients in your cupboard (and on your tree), you can have a go at making some yourself.
We add an extra little ingredient to speed up the probiotic activity
- some of our raw honey JUN 😋
A little wind and rain forecast for tomorrow but not nearly as bad as last week so of course the show will go on 🥳

Sorry to disappoint you all my bubbly friends - I have lots of brews on the table ready to bring to the Farmers Market but we are a little under the weather here so we'll have to give tomorrow a miss I'm afraid 😔
Nothing major, just a throat tickle that our Raw Honey, Ginger and Citrus Throat Soother will sort out in no time 👍

Just enough time to let you know about the goodies on the table at the Farmers Market tomorrow.....

Zav and I are really looking forward to sharing a couple of new flavours with you .... and a new product!!
Think soothing throat lozenges, in liquid form, in a 50c returnable bottle 😍
There's nothing better when your throat is a bit scratchy than the goodness and sweetness of raw honey, some root ginger and the vitamin C hit of citrus (in this case - limes😋).
Pop some directly onto your tongue or add some to warm (NOT HOT 🫣) water or tea. This is a great probiotic hit when you are feeling under the weather 🥳

He's manning the Tang.E.Tea Stall with Zav tomorrow so another cold start for him, but the weatherman has assured us of some sunshine after 9am so the boys will be able to defrost - hopefully.
A filled "Golden As Crepe" usually does the trick for Zav 🙄

I got asked at the market a couple of weeks ago why I don't do a hot beverage in this cold weather like other stalls do. The answer, quite simply, is that good bugs don't mind the warmth but they absolutely can't take the heat - so no hot kombucha bugs!
Heat destroys their cellular structure and denatures the essential enzymes and proteins, basically rendering them of no use to us whatsoever 😭(think pasteurisation).
So maybe the way to bring some heat for those that want it, without losing all the probiotic goodness, is to introduce some chillies into the recipe 🥵
Now there's some food for thought - yellow carrot and red chilli perhaps?🤔

Why are carrots orange?
Well we know it's the beta-carotene pigment in modern carrots, but it wasn't always the case.

When carrots were first cultivated, around the 10th century in Central Asia, they were not orange; they were various shades of purple and yellow all the way through to white.

Leaping forward to the 16th/17th century - Clever Dutch farmers started selectively breeding carrots to make them hardier and more delicious, and they ended up with shades of orange - which suited VERY well as the ruling family at that time came from the so called "House of Orange" - so a nice gift to honour the king, brownie points for the growers and a nice tasty root vegetable for the populace.
In 1689, said William of Orange (Protestant) booted King James II (Catholic) off the united English, Scottish and Irish throne, and brought his orange carrots with him when he moved house!

Well last Sunday one of my lovely customers gifted a HUGE bunch of colourful home grown carrots and limes - a real blast from the distant past (Thank yooooo).
Some of the limes are already in our green Kombucha this week - I wonder where the purple carrots will end up?
BTW: They all taste like..........carrot 😂

Well the bad bugs got to me a little this week so I had a day or two of sniffles and feeling a bit low on energy; but by the time I'd had a booch boost I was feeling a LOT better.
I got stuck into the honey Jun so sorry, there's not a huge amount left for tomorrows market 🤭

I've got some persimmons that I've allowed to go really soft so I can get some sweet juice from them - It's not really a very juicy fruit.
Another first for me so we'll see how it goes. Persimmons have a very gentle flavour too so I may have to pair it with something.

Well what a wild few days!!🌪️
I hope everyone is in one piece and there's not too much damage about ☹️
The wind seems to have collected all the leaves in the neighbourhood and dropped them at our front door - great for the compost bin so I'm not complaining.
I'm glad I collected some rhubarb and rose hips before the mad weather started. I now have a nice syrup for a brew next week😋

Red Pitaya (dragonfruit) is back on the list this week but I'd forgotten how much it stains - not for long tho (I hate wearing gloves!)

Liquorice is back, with a twist - clue: there's a tot of iodine in there, but where does it come from? And why can't you have it if you are allergic to seafood?
You'll have to brave the wind and cold and come see us at the Taranaki Farmers Market tomorrow to find out - how mean am I??😂
