Seris 2 doesn’t do subtle. Its name comes from the Al Idrisi map, and its place in the history of the word “Sherry” itself.

Peated New Zealand malt from Gladfield, double distilled in copper pot stills, first matured in STR American oak wine barrels before finishing in PX Apera casks.

Glazed orange peel, citrus, spiced apple and sandalwood on the nose. On the palate, butterscotch, raisins and fruit cake sit alongside a touch of peat, closing out with a savoury spice finish.

Sweetwater doesn’t need convincing. Our non-peated expression is aged for five years in STR French oak barrels, before finishing in ex-Bourbon casks.

A flavour profile that talks people out of « I don’t really like whisky » more often than we can count.
Honey, orange and vanilla on the nose. On the palate, candied orange, apricot and honeycomb give way to a dry, peppery finish with a touch of lemon and pip.
The French oak tannins hold it together and leave you reaching for the next pour.

Non-peated, easy drinking, still very much ours.

Today, we want to honour Myron, who started with us after high school and has since completed his Institute of Brewing and Distilling (IBD) qualifications.

Myron worked with us at the distillery and has ably hosted guests and tours for four years and is now Cellar Door Manager. He returns for a three-month stay at the end of the year and will then leave to pursue further study overseas.

Myron we are so proud of you and we wish you all the best for the things to come.
We will miss you dearly here at Waiheke. 🥃

Before a drop of whisky goes in, the cask has to be right.

We are incredibly grateful to have Mike on loan from our friends at Pokeno Whisky where he is the full time cooper to come help us.
Mike was re-coopering ex-bourbon barrels yesterday. That means taking them apart, repairing damaged staves, and rebuilding them from the ground up. It’s one of the less talked about parts of making whisky, and one of the most important.

The cask does a lot of the work. Up to 70% of a whisky’s final flavour comes from the wood it rests in. So we take this part seriously.

New whisky is filling these barrels soon. Check back in a few years.

Well, that was a good Tuesday.

We launched Altered Carbon at yesterday as part of Auckland Cocktail Week. Two hours of tastings, good conversation, and Penicillin cocktails that did exactly what they were supposed to.

If you missed it, Altered Carbon is now pouring at select bars across Auckland. Ask for a Waiheke Whisky Altered Carbon Penicillin on your next night out. IYKYK 😉
