Salty seed crackers with halloumi and Spicy Tomato Relish. So good! Stay till the end to see my camera shy taste tester 😘🫶

1.5 C mixed seeds (omega-3 mix in the bulk bins at pak n save)
1/4 C chia seeds
1/2 C rolled oats
1.5 tsp garlic and herb salt
Several grinds of black pepper
2 TBS olive oil
1 C boiling water

Mix together and leave to sit for 10 mins. Spread out on a tray and roll out to around 2.5 mm (thin = crunchy, thick = chewy).
Bake at 160 C for 20 mins then remove from oven and cut into the size you’d like. Bake another 20 to 30 mins or until firm. They will crisp up as they cool.
