We’re almost there folks, the countdown to spring is on!
In the meantime here’s a quick and easy week night chicken curry to warm the cockles after a long day. It makes enough for leftovers depending on who you’re feeding if you add rice or creamy garlicky mash and a ciabatta bun

4 chicken breasts
1 bag of chunky frozen veg
2 Tbs curry powder
2 tsp garlic powder
2 tsp onion powder
2tsp salt or more if you’re a salt lover like me!
3 Tbs Spicy Apricot Chutney
1 can coconut cream

Brown the diced chicken in a little olive oil and add everything except the coconut cream. Cover and simmer for 10-15 mins until the veg are tender.

Add the coconut cream and heat through.

Serve 🌶️🍑🌶️

It’s official, I have my certificate of audit for another three years!
Has business been easy? No
Has it created a fabulous income? Also no 😜
But I don’t regret anything. I keep telling myself I’ll put more time into getting more retailers and doing social media campaigns and email marketing and all the things and somehow I just never quite get around to it. Part of it is procrastination, part of it is financial, part of it is that I’m busy with other things like work and life and doing a course, but the biggest part is fear of rejection, the unknown, making mistakes. Not knowing where to get the right advice.
So I guess I’ll just keep taking baby steps. Tbh I’m just proud of myself for actually sticking to something and seeing it through and signing up for another 3 years, which wasn’t cheap or easy!

500 mls whipped cream
The best part of a can of condensed milk
Half a block of Whitakers dark chocolate chopped or whizzed
About 1/2 a cup of our chilli jam
Mix
Freeze
Eat
