We craft pure honeycomb, wildflower honey, and Manuka blend honey, along with natural, handcrafted soaps. Born and raised in a small village near Freising in Germany, my journey took a turn when fate led me to a change encounter with my partner Dave in Australia’s Northern Territory, which sparked a new chapter in my life. Since 2010, we have been living and building a life with our three vibrant

children at our remote family home on Mt. Nicholas Station, overlooking the breathtaking landscapes of Lake Whakatipu. Dave balances his time between the skies, where he works as a helicopter pilot in Queenstown, and the family farm, where he enjoys lending a helping hand. I have found a connection to nature here, which took root during my first pregnancy when I ventured into the world of beekeeping. I now tend to my own hives, working with my bees to produce pure comb honey, wildflower and manuka blend honey and natural honey soap. I contribute to the pollination of native bush and wildflowers on Mt. Nicholas, fostering a thriving ecosystem. Our children are an integral part of this endeavour and, donned in little bee suits, eagerly join in, learning about the importance of preserving the bond with nature while making lasting memories. Together, as a family we have a zest for adventure, we love camping in remote spots on the station and cozy nights spent in high country huts. Whether riding, fishing, hunting, or swimming in the pristine waters of Whakatipu and nearby rivers, our family revels in the simple joys of life. In the summer month you will catch us surfing in the picturesque Riverton, and in winter we head to the slopes above Queenstown for skiing. Our connection to the land goes beyond enjoyment; we love to take opportunities to participate in station work, including the busy tailing season and we are committed to conservation, collecting native bush seeds and cuttings, and nurturing them to reintroduce them to their natural habitat on the Station. I take immense pride in the life we have built, cherishing the opportunity to raise our children amidst the beauty and challenges of our unique existence. I hope you enjoy sharing our story and seeing snippets of our life on Mt. Nicholas whilst I showcase how and where our honey products are made.

Brewing kombucha at home and sweetening the second ferment with Nic’s Honey 🍯
Blueberry & mint is my favourite so far, but raspberry ginger, watermelon lemon and cherry have all been pretty yum too. Bees helping bubbles 🐝✨

We headed over to meet Regina at Nic’s - Mt Nicholas Honey in preparation for our latest Alta Fresca sangria brew 🍯 🐝

Nic's Honey contributes to the pollination of native bush and wildflowers on Mt. Nicholas, fostering a thriving ecosystem beside Lake Wakatipu.

Working with local producers is something we're really proud of and the team at Nic's have been producing some quality honey, which will provide the base for our the next iteration of your favourite sparking summer beverage.

I checked on my queen-raising frame today — and the bees did an amazing job! They’ve raised 7 beautiful queen cells. The weather finally played along, so I was able to transfer the cells into their new homes.

It’s my first go at raising queens, and I’m sure I made a few mistakes along the way — but it’s been fun so far!

Now it’s time to wait and see if a virgin queen has emerged. 🤞 Hopefully, we get a few warm days ahead so she can go on her mating flight and start her royal duties!

This season I’m trying something new — raising my own queen bees! 👑🐝
Not entirely sure if I’ve done everything right, but I thought I’d give it a go. In a few days I’ll find out if the bees approve of my chosen larvae… fingers crossed for some new queens for the hives! 🤞

Our latest tour release - Queenstown to Milford Sound via Walter Peak station, also journey’s right through the middle of another massive working farm - Mount Nicholas Station. Here is their honey made right on the station by the family! 😋

And that’s a wrap on the 24/25 honey harvest!
We finished up back in March—and yep, it was another early morning mission. Dave and I were out at 3am loading our full honey boxes by headlight to get an early run to our packer. Sadly, no video this year (too dark and too busy!), but trust me—there were a few sleepy, slightly grumpy bees wondering where all their hard work had gone!

Of course, we left two boxes of honey for each hive so they’ve got something sweet to see them through the winter.

Now it’s makeover time! I’ve started repainting our returned honey boxes a warm, light brown, and when the bees settle in for the night, I’ll be giving the brood boxes a fresh coat of creamy white. Let’s hope the bees approve of the new look!
