Pork Crackling - i salt pepper the pork Belly an hour before hand can be longer i put it in a roasting dish upside down on a cake rack and a cup of water in the tray oven is on at 200c this allows the steam to hit the pork skin make the air pockets expand for 20 minutes turn it over and drop the temp to 180c and carry on cooking i normally cook for 2 hours to render the oil out of the fat
