'Echt' is a Timaru based bakery specialising in real sourdough bread. We bake a range of German style dark and light rye bread and French style white loaves. All of flour and grains are sourced locally and we mill our dark organic rye ourselves.

My Scoff special 'Granatsplitter' is another treat that takes me home to Germany. They are made with a butter cookie base topped with a chocolate hazelnut. It is a little bit like a mountain shaped rumball with a twist.

Are you new here? You order first, I bake it, you collect it.
Order online by Monday 9pm . Then pick it up in Timaru Wednesdays, 17 Dee street between 3.30-6pm. In Geraldine Thursdays, Cafe Verde between 12.30-4pm.

I don't really need to mill my own flour to run a bakery, I can buy milled wholemeal flour in bulk, even German rye flour, conveniently delivered to my front door. But wholemeal flour goes rancid when it is stored, as the germ has a high oil content. Fresh wholemeal flour is also more nutrient dense and more flavorsome- that's why I love using it in my Ryevolution loaf or my wholemeal spelt shortbread.

It is baking day tomorrow, Wednesday. I finally have sourdough pizza bases back on the menu. Super thin and crunchy- great for freezing.

Its been a busy month with preparing for and trialling some new things behind the scene. So this weekend has been the perfect resting space. My menu at Echt this week will be:

"So where is your shop"? I have been getting phonecalls asking this quite regularly. Do you know I only sell my sourdough once a week on Wednesdays in Timaru and delivery is available to Geraldine on Thursdays?
My sourdough starts on a Sunday, I mill and measure Mondays, make dough Tuesdays and bake your loaves Wednesdays. I then set up my table on the backporch of 17 Dee street in Timaru and share my sourdough and stories with you.
