Filtering is a tricky process as it is very easy to clog the filter. It is a very fine balancing act of speed, pressure, and enough filter medium (a slurry of diatomaceous earth and cider) to keep the filter plates permeable for the entire run. This time it went smoothly. Yay!

We are about halfway through this year's batch, and I packaged it only a month ago. If you want to get some, then please order it online, or ask your local bottle store to stock it. We also have kegs for bars and cafes that want to stock. Just get in touch!

This last 10 minute boil addition was huge! 9.5kg of hops with some extra yeast nutrient and kettle finings. Kettle before and after. It was a very feisty cauldron. Terrifying, actually.

To tame it, I hose down the exterior dome of the kettle and this is usually enough to settle things. I found myself backing away and being quite enthusiastic with the hose.

Kereru Whale Played Red IPA will be packaged in the next couple of weeks.
