🌱 Using granite wheels, the roasted beans are ground for several days in a process which slowly decreases the molecule size to create incredibly smooth chocolate with no need for additional additives.

🛳️ All aboard the Daryā Express, where magical and mystical adventures await… Sail through the Spice Route on a traditional, Middle Eastern Dhow, and taste your way across the oceans, as we embark on a journey to Tamil Nadu, India, Damascus, Syria, Dubai, UAE, SoCotra Island, Yemen and Zanzibar Island, Tanzania.

🇦🇪 The Daryā Express gets its name from the notorious ‘Bū Daryā. In Arabic, “bu” or “abu” translates to “father”, while “darya” originates from the Persian and Indian word for “sea”. Bū Daryā was seen as a terrifying and colossal half-human half-amphibian who preyed on those out at sea. In fact, according to one version of the legend, Bū Daryā would sneak onto unsuspecting ships at night before scurrying off with crew members whom he would devour, and in some cases sink the ship. The legend of Bū Daryā has been an Arabic folklore tale for many generations, and when children are not behaving they are threatened with Bū Daryā.

🇳🇿🥃🍫 All our Christmases have come at once — Foundry Chocolate's limited edition whisky bar is back!

Each year, Foundry Chocolate team up with their friends at Thomson Whisky New Zealand to create this tasty bar! For 2024, they’ve paired Tanzanian cacao with a special NZ pinot noir barrel-aged single malt whisky.

Mat Thomson perused his extensive barrel room and selected a limited edition pinot noir barrel-aged whisky, rich in tones of spicy raisin and clove. The resulting chocolate offers a wonderfully complex flavour journey; enhanced fruity and silky vanilla notes from the Tanzanian cacao, as well as delicate notes of berry, grape, liquorice, sumac, and a little woody and cinnamon in the finish. 😋

The single-origin cacao comes from Kokoa Kamili, a cooperative supporting nearly 3,000 smallholder farmers in Tanzania’s Kilombero Valley. Paying above-market rates, KK empower farmers with fair wages and take over fermentation and drying to ensure the highest quality fine flavour cacao beans. KK also distribute cacao seedlings to promote sustainable farming, having helped plant over 140,000 trees in recent years! 🇹🇿

This special batch is as rare as it is indulgent. Once the limited run is gone, that’s it!

Peru is a treasure trove for chocolate lovers, offering a wide range of cacao flavours thanks to its distinct growing regions with unique climate, soil, and altitude, resulting in cacao terroir–its own remarkable characteristics.

In addition to regional nuance, Peru is home to different cacao genetics including criollo and the famous rare white cacao Piura Blanco. These beans are highly prized for their delicate flavors and low bitterness, offering a complex and memorable chocolate experience. For example, Piura’s white cacao brings nutty, creamy and date notes, while criollo varieties tend to showcase darker notes such as coffee and brown sugar. Each region is uniquely delicious and worth exploring.

If you’re curious about how to taste the difference, you’re in for a treat! We’ve put together a simple guide to help you experience the unique flavours of cacao from around the world. 🌏

What Is Cacao Origin?
This refers to where in the world the beans are grown, and each region has a unique combo of climate, soil type, altitude, and farming practices, which influence the beans' characteristics. When we talk about cacao origin or single origin, we’re exploring the terroir (similar to wine) that gives chocolate its unique taste.

TANZANIA 🇹🇿
Tanzanian cacao is renowned for its lively, fruity flavours, often with bright berry or citrus notes. Some chocolates also have floral or herbal notes.

VANUATU 🇻🇺
Cacao from this Pacific island is often rich with nutty, dark sweet flavours, sometimes with hints of tropical fruit or spice. The natural environment of Vanuatu gives cacao a complex depth.

DOMINICAN REPUBLIC 🇩🇴
The Dominican Republic produces cacao with strong chocolatey bases, often accompanied by fruity notes like raisins, plums, dried fig and cherries.

Did you know that people were enjoying chocolate beverages long before chocolate bars were invented? ☕✨

In ancient Mesoamerican cultures, both the Maya and the Aztecs were known for their love of chocolate drinks, but their recipes were quite different from modern drinking chocolate. Unlike today, they drank chocolate at room temperature, often mixing ground cacao with water and spices like chilli peppers. The Aztecs, in particular, added honey and vanilla, creating a rich, frothy drink called xocolatl.

Whether hot, room temperature, or even iced, drinking chocolate is a delicious way to enjoy the essence of cacao. 🍫
