We are the world's biggest island, so no surprise we dominate the water.

Staff training day! A few new faces have popped up at the team at so it was time to spend an afternoon chatting about all things Australian.

A great group as always, lots of questions, comments and opinions which I love.

We have added a few w**es to the menu lately so get up there for your next fine dining experience.

In the cathedral. Henscke is regarded as one of the best w**eries in the world. The most expensive red in Australia, and I figured out why.

Totally amazing day, a superb tasting.
