I remember as a child, it is very seldom that we can have a letchon manok on the table, but as I recall and sometimes watched on TV. Letchon Manok is always perfect for lunch together with lechon liempo and a big bottle of your favourite drinks. It’s one of those simple feast that I always remember.

Congrats-Cho Letchon manok basically is the roast chicken of Asingan, but it’s quite unique as it is flavoured differently and cooked in a charcoal spit. Like any roast it is stuffed but the stuffing on lechon manok is not to be consumed but rather give a distinct flavour and aroma to the chicken. A smoky, juicy and lemony chicken that is very addictive to a Filipino palate. Especially to us Ilocanos, special ingredient like karumbwaya as what they call is a must...yum!!!
