🍌 Banana Balls with Mascovado Sugar Filling
Ingredients
For the Banana Dough:
4 pcs ripe saba bananas
1½ cups glutinous rice flour
½ cup all-purpose flour
¼ cup sugar
¼ tsp salt
¼ cup water, or as needed
Cooking oil for frying
For the Mascovado Sugar Filling:
1 cup mascovado sugar
¼ cup water
1 tbsp margarine or butter
Optional Coating:
Extra mascovado sugar
Procedure
Prepare the filling: In a pan, combine mascovado sugar, water, and margarine. Cook over medium heat while stirring until the sugar melts and becomes thick and syrupy. Let it cool completely.
Prepare the bananas: Peel the saba bananas and mash them until smooth.
Make the dough: In a bowl, combine mashed bananas, glutinous rice flour, all-purpose flour, sugar, and salt. Gradually add water and mix until you have a soft, non-sticky dough. Add a little flour if the dough is too sticky.
Fill and shape: Take about 1 tablespoon of dough and flatten it in your palm. Place about ½ teaspoon of cooled mascovado filling in the center. Carefully wrap the dough around the filling and roll into a smooth ball.
Heat the oil: Heat enough cooking oil in a deep pan over medium heat.
Fry: Carefully place the banana balls into the hot oil. Fry until golden brown and cooked through, turning occasionally.
Drain: Remove the banana balls and place them on a paper towel to remove excess oil.
Coat (optional): While still warm, roll the banana balls in extra mascovado sugar.
🍌 Final Output: Crispy and golden banana balls with a soft, chewy banana exterior and sweet, caramel-like mascovado sugar filling inside.
