These ribeyes are 28 days into the dry-aging process, developing the deeper flavor, tenderness, and character that make dry-aged beef so special.

On top: Australian Wagyu Prime Ribeye MB4–5
Below: Australian Black Angus Ribeye MS5+

Different beef, different marbling, both given the time they deserve. And for now, they’re right where they need to be — in our dry ager.
The wait is part of the craft. 🥩
