BONGSOS & BEANS + TENGBA

PORK n BEANS

Crafted by Shiraz Smokehaus with thier signature smoked ham and bacon. Sweet and a little tangy.

I added my last piece of their smoked cheese sausage, topped with parsley for presentation...and thats it! A great meal and you can buy tubs packed and frozen for anytime use.

OVERLOAD?

After harvesting fresh and freeeeee sayote and talbos, the plan was tinola....but I was craving mongo...so here we go. Added the gulay to the mongo and fried up some tofu, silet (pork small intestine) and a marinated chicken quarter....needed the power up after a good work out.

DIM SUM?

I followed a Cantonese recipe for this chicken feet dish (excellent sauce) but I was hoping to get the bones sooooo soft you can kill the entire foot. 5 mins in the power Afghan pressure cooker and I should prob get the bone melt I was looking for next time.

I needed collagen for my ligaments, don't judge!

FIRST BLOOD

This is Baboy Ramo (wild boar/pig) crossed with a native black big. Super flavorful but the meat can be tough. This new pressure cooker got it done in 15 mins, as tender as braised beef.

AFGHAN KAZAN

An Afghanistan style pressure cooker made from very thick cast aluminum, making it very lightweight while being able to cut cooking times in half. Can't wait to use this new kitchen tool!

GRATIN?

Loosely based the beloved gratin. I blanched zucchini, carrots, french beans, potatoes, broccoli and cauliflower and the last of my arugula. Stirred in a mix of cream, fried chicken coating mix (thought I had bread crumbs but I didn't), garlic, salt n pepper. Baked in an air fryer at 160 for 10 mins, then 180 for the final 5 while topped with 2 kinds of cheese.

No rice for today, but this is more than filling alongside a slice of fish.

Your way, your rules. Try it without the cream, maybe a butter/egg/breadcrumbs mixture. Use what vegetables are available to you. Experiment and have fun, but don't skip that cheese!
