Carrot cake cookies
Ingredients
2 cups flour (All purpose/cake)
1/2 cup white sugar
1/2 cup brown sugar
1 cup melted unsalted butter
2 eggs
1 & 1/2 cups grated carrots
1 tsp baking powder
1/2 tsp bicarbonate of soda
2 tsp corn flour/corn starch
1 tsp cinnamon powder
1/2 tsp nutmeg
2 tsp ginger powder
1/2 tsp salt
2 tsp vanilla essence
1/3 cup raisins
1/3 cup walnuts/ any dried fruits (optional)
Instructions
1. On a stove ,melt the butter in a saucepan then transfer it in a large bowl and let it cool off.
2. After the butter has cooled off, add the white and brown sugar then mix . Then add in the eggs and vanilla. Mix well .
3. Sift in flour , corn flour/ corn starch ,baking powder, bicarbonate of soda , cinnamon, salt , ginger, nutmeg and mix everything well together.
4. Add in the grated carrots , walnuts, and any dried fruits you prefer. A handful of muesli will be perfect too .
5. Use an ice cream scoop or tablespoon to scoop the dough .
6. Line the baking tray with parchment paper and place the cookie dough (balls) .
Let the dough chill in the refrigerator for at least 3 hours or overnight.
Or alternatively chill the dough in the freezer for 1 hour .
7. Bake in a preheated oven at 180 degrees Celsius for 25 minutes or until well baked.
Note ❗️: If you are using salted butter don’t add salt to the recipe.
