If you already find a classic Basque Burnt Cheesecake to be extremely appetizing, wait till you see ’s take on it. I love a classic Basque Burnt Cheesecake for its deeply caramelized top and soft gooey creamy center. But imagine adding a crispy and texture-y toppings, I think “delicious” would be an understatement. This combo is sublime!! Their choice of flavors really went well with the rich and dense cream base. The matcha was not just in the cheesecake itself, they even added a matcha coated cereal on top. I love it so MATCHA!! the juxtaposition of the flavors and textures was definitely gravity-defying. The other flavor was the Mixed Berry Basque, and you know what Baguio people love doing: They tease and seduce you with that extra bunch of LOCAL PRODUCE. The toppings were fresh and generous layer of berries. Every slice was a contrast of that crunch from the strawberry and the gooey cheesecake. The fresh, punchy and zestful flavors were balanced out in this utterly dainty dessert.

Alam mo ba? started baking in 2018 for weddings, birthdays and other events. They only went full-time this year after realizing that they wanted to specialize in Cheesecake. They tweaked their recipe with the idea of prefacing an added texture to the classic and authentic slice. Aside from the flavors I tried, they also have white chocolate ube basque. They wanted all their cheesecakes to taste as good as they look. Indeed, they delivered to that promise.
