Baked Potato with Pickled Jalapeño Slices
Ingredients:
1 large russet potato
1/2 tablespoon olive oil
Salt and pepper, to taste
2 tablespoons shredded cheddar cheese
2 tablespoons sour cream
1–2 tablespoons crispy bacon bits (optional)
1–2 tablespoons pickled jalapeño slices
1 teaspoon chopped fresh chives (optional)
Instructions:
Preheat oven to 425°F (220°C).
Prepare the potato: Scrub clean, pat dry, and prick several holes with a fork.
Season: Rub with olive oil and sprinkle with salt and pepper.
Bake for 45–60 minutes, or until the skin is crispy and the inside is fork-tender.
Slice and fluff: Cut a slit on top and gently fluff the inside with a fork.
Add toppings: Sprinkle cheese first so it melts, then add sour cream, bacon bits, and pickled jalapeño slices.
Serve hot and enjoy!
