Adobong Ayungin

Ingredients:
•8–10 pieces ayungin, cleaned
•4 medium eggplants, sliced lengthwise
•1 medium onion, sliced
•6 cloves garlic, crushed
•2–3 siling haba
•½ cup soy sauce
•2 teaspoons vinegar
•1½ cups water
•1 tsp whole black peppercorns
•1 tbsp brown sugar (optional)
•2 tbsp cooking oil

Procedure:
1. Heat the oil and lightly fry the eggplants. Set aside.

2. Sauté the garlic until fragrant, then add the onion and cook until soft.

3. Arrange the ayungin in the pan.

4. Add the soy sauce, water, whole peppercorns, and brown sugar (if using). Simmer for 10 minutes.

5. Pour in the 2 teaspoons of vinegar. Let it simmer for 2–3 minutes without stirring.

6. Add the eggplant and chilies. Cover and simmer for another 8–10 minutes, or until the fish is fully cooked and the sauce has slightly reduced.

7. Serve hot with steamed rice.

This version has a more savory, less tangy flavor, making it ideal if you prefer a soy sauce-forward adobo. If you want it even richer, you can add 1 teaspoon oyster sauce during simmering.
