Happy Holiday season to all our wonderful readers! Tis’ the season full of fun, forgiveness, family, and most importantly: FOOD!!. In our culture, most Filipino Christmas celebrations are not complete without the feast before the Christmas day that we call Noche Buena. However, each family celebrates their holidays differently; and here at Bon Appetit, a food blog run by five different people, we ought to show to you the diverse food we were served on Christmas.

Here at the house of Tomon (Writer Emman’s family), a variety of flavors from classic Filipino cuisine and desserts were served. In our home, we had a seafood and vegetable boil that included shrimp, corn, boiled potatoes, and etc. Classic Filipino cuisine were served as well, such as menudo, Embutido, liempo, and Filipino-Style Spaghetti. For dessert, we had boxes of donuts from J.Co, a lovely Ube-Leche cake from Conti's bakeshop and restaurant and the famous Mango-Graham float. Overall the food was wonderful! Why wouldn’t it be? It was made with love and the joy of the holidays. I adored the savory tastes of the “ulam” and the sweetness of the spaghetti sauce!

There are two dishes from our Christmas Eve dinner that I particularly enjoy. The first one is my personal favorite: buttered shrimp. My mother made this for us, and I can't get enough of it. It has a great flavor and large shrimp, so I really enjoyed it. All of us know how delicious buttered shrimp are, especially when they are made by our loved ones; it really adds extra flavor to them. I'm not sure what the name of the second dish is, but I believe it's sticky oyster chicken. It was delicious, and it tasted similar to adobo but was sweeter. I love how the sweetness and flavor of oysters compete with each other, and trust me, it's a little spicy, but I think it's just my mom's preference to put some chili on it. Overall, it's delicious.

One of the best dishes that my mom prepared for our Christmas eve dinner was Pork Hamonado. Pork is simply sweetened with pineapple sauce to make Hamonado. Honestly, this is my favorite dish that my mom cooks and I can say that it is also one of the most delicious dishes that she cooks for us. This is only one of many Filipino meals that contains sweetness. This meal is typically served over the Christmas season. Some of you may be wondering if sugar and meat, such in this recipe for pork hamonado, can actually work together. The simplicity of this recipe for pork hamonado is what I enjoyed best about it. Imagine preparing a delicious dinner in only three simple steps—marinating, pan-frying, and simmering. Even new cooks can easily produce this dish. The taste was yet another item that caught my attention. I cherished the way the flavors were balanced. It was fantastic, in my opinion.
