Isang paboritong Pinoy classic—malinamnam, creamy, at puno ng sarap!
Kare-Kare ❤️
👇
Ingredients:
1 kg pork liempo, cut into bite-size pieces
Salt and pepper
Cooking oil for frying
1 onion, chopped
4 cloves garlic, minced
4 cups pork broth or water
1 cup unsweetened peanut butter
2 tbsp toasted rice flour
1–2 tbsp annatto powder or annatto oil
1 eggplant, sliced
1 bundle pechay
1 cup sitaw, cut into pieces
Banana heart, optional
Bagoong alamang, for serving
How to cook 🧑🍳
Season the liempo with salt and pepper. Fry until golden brown and crispy. Set aside on a rack or paper towel.
Cook the vegetables separately until just tender. Don’t overcook them.
In a pot, sauté onion and garlic. Add the annatto and stir briefly.
Pour in the broth. Add the peanut butter and stir until smooth.
Mix the toasted rice flour with a little water, then add it gradually. Simmer until the sauce is thick and creamy. Add salt and pepper lightly.
Add the vegetables to the sauce.
Add the fried liempo only right before serving so it stays crispy. You can also pour the kare-kare sauce into the serving dish and place the crispy liempo on top.
Serve with hot rice and bagoong.
For an extra-crispy version, boil the liempo first for about 30–40 minutes, let it dry completely, then deep-fry it before adding to the kare-kare.
