Q: How long does it last in the freezer?
A: Not long, you'll eat it!
For the best quality and flavor, Pag Chor Oie’s Chorizo de Cebu typically lasts 3 to 4 months in the freezer.
While it can technically remain safe to eat indefinitely if kept at a constant -18°C, the high fat and sugar content in our sausages can cause the texture to become grainy or the flavor to diminish (freezer burn) after the four-month mark.
Proper Storage Tips
To maximize the shelf life and prevent the links from absorbing other odors:
* Double Wrap: Keep our chorizo in plastic, then wrap it tightly in aluminum foil or place it inside a heavy-duty freezer bag.
* Remove Air: Squeeze as much air out of the bag as possible before sealing to prevent ice crystals from forming.
* Portioning: Since our chorizo is sold in strings or "beads," it’s helpful to freeze them in small batches so you only thaw what you need for a single meal.
Signs of Spoilage
When you decide to cook them, check for these red flags after thawing:
* Texture: If the meat feels excessively slimy or mushy.
* Smell: A sour or "off" ammonia-like scent (distinct from the usual garlicky, sweet aroma).
* Color: Significant graying or dullness of the meat.
Pro-Tip: For the best results, thaw the chorizo in the refrigerator overnight rather than on the counter. This keeps the fat stable and ensures they don't break apart when you fry them up with a little water and oil.
