​While most people refer to the entire dish simply as pastil, the star ingredient actually has its own name: kagikit.

​Originating from the Maguindanaon people, kagikit refers specifically to the shredded, slow-cooked chicken (or fish/beef) flakes used as a topping. It is only when this flavorful meat is placed over a bed of steaming rice and tightly wrapped in wilted banana leaves that the complete package becomes pastil—the ultimate budget-friendly, on-the-go meal.

​Today, this beloved dish is rapidly evolving. Home cooks and entrepreneurs are innovating with exciting new flavors, introducing everything from spicy siling labuyo infusions to premium versions like tuna and cheesy kagikit. Because it is affordable to make and incredibly popular, pastil has also become a powerful source of livelihood, sparking countless thriving small businesses and food stalls across the country.
