..Scenes from my “crime lab"...I have more knives than chickens very uncommon...Not by choice, but a price to pay for my choice...I keep over 500 pieces in rotation....My sharpener, Chael, arguably the best in Cebu, takes at least a month whether it’s 20 or 200 pieces...My maker, Dodong Tari Rabungue, one of the best in the industry, only gives me one slot a year so when it opens, I order at least 200 pieces...All in, I carry around 800 knives at any given time, used and brand new...
