π₯ Very fresh eggs tend to be harder to peel. The white sticks more tightly to the membrane.
π₯ Cooking method matters. Starting eggs in already-boiling water or steaming them often makes peeling easier.
βοΈ Not cooling quickly can make peeling more difficult. Put them in an ice-water bath after cooking.
π Eggshell/membrane differences can also make some eggs peel more cleanly than others.
For smoother peeled eggs: use eggs that are about 1β2 weeks old, cook them in boiling water/steam, then immediately chill them in ice water for about 10β15 minutes.
If by βroughβ you mean the egg white itself has little rough bumps or a grainy texture after boiling, tell meβthat can have a different cause.
