Kalamay sa Latik. A family recipe passed down by my Nanay.❤️

Definition:

Kalamay sa Latik is a traditional Filipino delicacy made primarily from glutinous rice, coconut milk, and sugar. The term “kalamay” refers to a sticky sweet rice cake or pudding, while “latik” can refer to either:

1. The rich coconut caramel sauce made by cooking coconut milk and sugar until thick, or
2. The toasted coconut curds produced when coconut cream is simmered until the oil separates.

In many parts of the Philippines, especially in Central Luzon and the Visayas, Kalamay sa Latik consists of a soft, chewy rice cake topped or coated with sweet coconut latik, giving it a rich coconut flavor and glossy appearance.
