Made a big Filipino-ish feast at ’s for her belated birthday with (big Sous - pictured with Munchkins) on Friday:

- Goth devilled eggs with burnt aubergine puree - v smoky, a nod to tortang talong, I first made these for The Ministry of Time supper club hosted by bookshop last April - the ‘ashed-in eggs’ were inspired by Graham Gore chain smoking over the breakfast he makes for The Bridge 🚬🍆

- Kinilaw - sea bream cured in sukat (spiced cane vinegar) from Siargao ❤️ with blood oranges and radishes. I was reading Doreen Fernandez’s Kinilaw last year (thanks to !) and came across a passage imagining the relief of scurvy-riddled explorers landing on Filipino shores being presented with a dish of fresh fish and citrus - so it seemed the perfect thing to make for Victorian polar explorer Graham Gore at the Ministry supper club. Cheffy green oils and fancy plating = not my comfort zone 🙅🏻‍♀️ but we gave it a go!

- Chicken & mushroom adobo, jollof rice with buttered carrots and green beans - as requested by the birthday girl!

(For the Ministry supper club the main course was Mapo Tofu: The Bridge tries to provoke a reaction from Graham, thinking the ‘belligerent’ amount of garlic and spices will f**k him up, but ever the adventurous lover of new experiences, he immediately becomes obsessed and asks for seconds)

Yes, we bought 2kgs of dried mangoes (best in the world, fight me) during our pre-flight supermarket sweep but I think I was v restrained putting the third can of corned beef back on the shelf 😇

Thank you , and Sean Singco for these treasured gifts - they’ll keep the tropical spirit going in this British winter :)

Grilled fish, ginisang mungo (mung bean stew), fish stew, liempo (grilled marinated pork belly), spicy beef tripe soup - all were stellar.

A must-visit in Siargao!

Unique, incredibly stylish bar with delicious cocktails, and phenomenal food by chef Sean Singco (formerly of Ikoyi and Nay Palad) - the Cajun steak frites and roast carrots with tzatziki were sensational.

The house cocktails were a hit - fresh and inventive, using Filipino ingredients like Tapuey (fermented rice wine) and calamansi. Recommend the Sunny Sili, Coconut Old Fashioned, Situationship and Tapuey Cobbler 👌

Really friendly staff too. Love the music, decor and ambience. It was so good we went four nights in a row!
