Homemade Chicken & Seafood Paella 🇵🇭✨
Golden, flavorful, and packed with goodness! This classic favorite is easier to make than you think.
📝 Ingredients
- 2 cups rice (preferably short-grain)
- ½ kg chicken pieces
- ½ kg mussels, cleaned
- 1 medium squid, sliced into rings
- ½ cup green peas
- 1 red bell pepper, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 2 tbsp tomato paste
- 1 tsp paprika
- ½ tsp turmeric (for that golden color)
- 3–4 cups chicken/seafood broth
- Salt & pepper to taste
- Cooking oil
- Lemon wedges to serve
👩🍳 Cooking Steps
1. Sauté: Heat oil in a wide pan/paella pan. Sauté garlic, onion, and tomatoes until soft. Add chicken and cook until lightly browned.
2. Season: Stir in tomato paste, paprika, turmeric, salt, and pepper. Mix well.
3. Add rice: Pour in the uncooked rice and stir for 2–3 minutes until grains are coated and fragrant.
4. Simmer: Pour in warm broth. Bring to a boil, then lower heat to the lowest setting. Cover and cook for 15–20 minutes until rice is nearly tender.
5. Add seafood & veggies: Arrange mussels, squid rings, peas, and bell pepper on top. Cover again and cook for another 8–10 minutes until seafood is cooked and liquid is absorbed.
6. Rest & serve: Turn off heat, cover, and let it rest for 5 minutes. Squeeze fresh lemon juice before eating to bring out all the flavors!
