Doña Marcela Abogadie Vda. de Sarsonas y Acedera – fondly called Nanang Elay – was a local producer of tabléa de cacao. Born in 1884 in Hindang, Leyte, she learned the art of making tabléa as a child from her old folks who were of Mexican-Spanish ancestry. She then started making it on her own after her marriage in 1902 to Don Lucas Sarsonas y Abedejos.
Over the years, the family has been making tabléa de cacao solely for their consumption and as gifts for intimate friends but after her husband’s death in 1923, Nanang Elay started to commercialize her trade. Little did she know that her skill in making tabléa de cacao will later support her family .
Production increased in the ’70s and even after her passing in 1978. It was in the early ‘90s, however, that the family stopped production when her youngest daughter-Aquilina Sarsonas Alorro y Abogadie became preoccupied with church duties, and also with the fact that her grandsons (who peddled the tabléa daily before going to school) all went away to college and eventually settled in Manila. The dwindling supply of Cacao beans during that time also contributed to the temporary halt in production.
It was only in 2010, when the family started doing it again but only on a made-to-order basis. The business was formally reopened on April 30, 2018. New and modern equipment were acquired to facilitate mass production to cope with demands and large orders. Although modern pieces of equipment are now used, the tabléas are still made using traditional technique and process thereby retaining its original classic taste.
