The coffee borer beetle doesn't just leave a hole—it triggers a chemical chain reaction that destroys the cup. 🪲☕

Here is the science behind the defect:

Structural Rupture: When the insect penetrates the seed, it breaks the bean's cellular defense. This open wound accelerates premature oxidation and invites microbial pathogens inside the green bean.

Chemical Collapse: The internal damage causes a severe drop in density and sugar concentration. The crucial aromatic precursors degrade, paving the way for uncontrolled, "unclean" fermentations.

Roasting Chaos: Because these beans are hollowed out and lack density, they absorb heat erratically. They behave inconsistently in the roaster, often baking or scorching while the healthy beans roast normally.

The result in the cup? A total loss of clarity. The natural terroir is replaced by notes of wet wood, cardboard, and mold. Sweetness drops, acidity fades into harsh bitterness, and the finish becomes aggressively astringent.
