S**ang Pinakurat originated in Iligan City, Mindanao, Philippines. It was developed by Rene Jose B. Stuart del Rosario, who created this spiced coconut vinegar blend around the year 2000.
The name is derived from the Cebuano word "kurat", which means to "surprise" or "frighten," referring to the intense, spicy kick that surprises the taste buds. It is also rooted in the Iliganon dish, where wild boar is cooked in coconut vinegar.
It is a spiced, fermented coconut sap vinegar (sukang tuba) infused with bird's eye chili ("labuyo"), garlic, and other spices.
The product was developed by the Stuart del Rosario family as a way to build a livelihood after a financial crisis.
The brand is manufactured by Green Gold Gourmet Foods, based in Iligan City. The family registered trademarks for "S**ang Pinakurat," "S**a Waykurat," and "Kuratsoy" in 2004.
It is often referred to as the "Sawsawan ng Bayan" (dipping sauce of the people) and is a popular partner for grilled meats and roasted pig (lechon).
