From humble beginnings, the story of Bitoys Nilagaan traces its roots back to the 1970s, when a small but passionate food stall opened its doors in a quiet neighborhood. The stall, operated by the ever-smiling Bitoy, started off as a modest venture, serving simple yet heartwarming dishes to local families and workers. Bitoy, who had always been fascinated with cooking, had a secret recipe that was unlike any other a rich, flavorful nilaga that could warm the soul, and crispy, mouthwatering kawali that became an instant favorite.
But it wasnโt until 2007 that Bitoy's culinary legacy was given a name that would soon be recognized in iloilo Bitoys Nilagaan Patahan and Eatery. That year, Bitoyโs daughter, Jonette, who had grown up helping her father in the kitchen, took over the reins of the business. She revamped the humble food stall into a beloved establishment that would soon become a staple for food lovers from all walks of life.
Junette's vision was clear: to honor her fatherโs recipes while introducing new flavors that could appeal to a wider audience. With her energy and determination, she turned Bitoys Nilagaan into a household name, a place where family and friends gathered to enjoy a good meal and great company. In an interview with Bobby, Junetteโs brother in law and the son-in-law of Bitoy, we learned about the backstory of the business and the dishes that made them famous. Bobby fondly recalled how, in the early days, their small stall was always buzzing with customers who were looking for a comforting meal after a long day or a night out. What really made Bitoys Nilagaan stand out, according to Bobby, was their unique specialty, nilaga (a clear, hearty soup filled with tender meats and vegetables) and kawali (crispy fried pork belly) that had a flavor and texture unlike anything else in the area.
Bobby explained that Bitoys Nilagaan quickly became the go-to place for partygoers, night owls, and anyone needing a warm, satisfying meal late into the night. After long sessions of drinking or dancing in the clubs, people would flock to the restaurant for a steaming bowl of nilaga, known for its restorative properties. It was said that the savory broth could cure a hangover, soothe a tired body, and provide comfort to those who had partied the night away. The kawali, too, had a cult following, crispy on the outside, tender on the inside, and paired perfectly with a cup of warm rice and a cold sofrtdrinks.
As the years went by, the restaurant grew, becoming a beloved institution in the community. The walls, adorned with photos of loyal customers, old family pictures, and accolades, told the story of a place where people came not just for the food but for the experience where memories were made over bowls of nilaga and plates of kawali.
Junette and Bobby made sure that every customer who entered felt like part of the family. Despite the growth of the business, they never lost sight of the values that Bitoy had instilled in them: a deep commitment to quality, consistency, and hospitality. Today, Bitoys Nilagaan is a local institution, a place that continues to serve the same comforting flavors that have made it a favorite for generations.
For Bitoy according to Bobby it is not just about preserving a recipe it's about honoring the tradition of bringing people together. He often says, โFood has a way of connecting people, making them feel at home, no matter where they come from. Thatโs what Bitoy is all about, bringing good food, made with love, will always find its way into the hearts of others.โ
