That year, Bitoyโ€™s daughter, Jonette, who had grown up helping her father in the kitchen, took over the reins of the business. In an interview with Bobby, Junetteโ€™s brother in law and the son-in-law of Bitoy, we learned about the backstory of the business and the dishes that made them famous. What really made Bitoys Nilagaan stand out, according to Bobby, was their unique specialty, nilaga (a clear, hearty soup filled with tender meats and vegetables) and kawali (crispy fried pork belly) that had a flavor and texture unlike anything else in the area.

Bobby explained that Bitoys Nilagaan quickly became the go-to place for partygoers, night owls, and anyone needing a warm, satisfying meal late into the night. After long sessions of drinking or dancing in the clubs, people would flock to the restaurant for a steaming bowl of nilaga, known for its restorative properties. It was said that the savory broth could cure a hangover, soothe a tired body, and provide comfort to those who had partied the night away. Junette and Bobby made sure that every customer who entered felt like part of the family. For Bitoy according to Bobby it is not just about preserving a recipe it's about honoring the tradition of bringing people together. Thatโ€™s what Bitoy is all about, bringing good food, made with love, will always find its way into the hearts of others.โ€
