Spent some time at Balay Tablea recently, and honestly… this place hits different if you’re into local food and culture.

It’s not just about chocolate. They’re all about preserving traditional Iloilo cacao—making tsokolate the old-school way using stone grinding (metate y mano).

No shortcuts, no artificial stuff—just pure, legit tablea.

What I liked most is that you actually get to see how everything is made.

From roasting the cacao beans all the way to grinding and turning it into that rich, thick hot chocolate we grew up with. It’s simple, but there’s something really satisfying about watching the whole process.

They’ve got a nice lineup too: – Pure tablea
– Tablea with muscovado or coconut sugar
– Tablea ice cream (yes, and it’s good)
– Piaya de tablea
– Even tablea tea

It’s also cool knowing that they support local cacao farmers and keep this tradition alive. Not just a business—more like a small community effort that actually means something.

If you’re ever around Cabatuan, this is one of those places worth dropping by. Good food, good story, and very “Iloilo” in the best way.
