Sweet & Sour Fish ( Escabeche)
Fillet
1 kg fish, deboned and fillet
1 tbsp seasoning
1 tsp pepper
1 tsp fine salt
Fish
3 cups sweet & sour sauce
1 cup pineapple tidbits
1 cup round carrots
1 red bell pepper, strips
1 green bell pepper strips
1 thumb ginger, strips
2 pcs sili haba , cut
1/2 cup chopped spring onions
1 red onion slice
3 tbsp granulated sugar
2 tbsp sugar
1 tbsp cornstarch
1/4 cup calamansi juice
1 tbsp seasoning
1 tbsp worcestershire sauce
1 tsp black pepper
2 tbsp oil
oil for frying
In a glass bowl combine fish, pepper, calamansi and seasoning.
Marinate fish for 4-6 hours, chilled.
Coating
2 1/2 cup cornstarch
2 tbsp seasoning
2 tsp pepper
1 1/2 tsp fine salt
5 xl eggs beaten
In a glass bowl combine cornstarch, fine salt, pepper and seasoning, set aside.
Dredge marinated fish in coating, , deep in beaten eggs and coat again with mixture.
Deep fry until golden brown.
Sweet And Sour Sauce
Yield 3 jars
2 cups canned pineapple juice
1 1/2 cups packed light brown sugar
2/3 cup rice vinegar or apple cider vinegar
1/2 cup ketchup
1/4 cup soy sauce
3 large shallots minced
3 cloves garlic minced
In a food processor, process pineapple juice, shallots and garlic till purée.
For thickening if sauce
3 tbsp cornstarch dissolved in 1/4 cup water
3 drops all-natural red food coloring
In a non reactive casserole combine pineapple -shallots & garlic mixture.
Add soy sauce, sugar,vinegar and ketchup.
Bring to boil till sugar melts.
Add cornstarch mixture, and simmer for 7 minutes on a low fire.
Take out of the heat and allow to cool.
Store in an airtight container in the refrigerator for 2-3 weeks
In a skillet heat 2 tbsp oil , saute onion and ginger, add in fish fillet and sweet and sour sauce.
Bring to boil add in worcestershire sauce, pepper,sugar, seasoning, salt.
Add bell pepper, pineapple and carrots, simmer for 7-10 minutes.
Ads with chopped spring onions.
